Strong performer
I'm happy to add this blade to my eclectic collection of kitchen knives. I do enough work in my kitchen that I need good tools and I especially have no patience for poor quality knives. I'm in the process of slowly upgrading the entry level set which has lasted about 30 years with highly rated knives that have better balance in my hand and are easy to clean and maintain. I'm getting great performance with this Victorinox Flex boning knife. I mainly use it to slice meats and fish, both uncooked and cooked. The blade is a little longer than I'm used to in a fillet-style knife, so I may eventually order a 5" version to go with this one. But no complaints. The handle is lightweight and feels natural in my hand. I've only sharpened---well actually lightly honed---it once, and it was right back to being out-of-the-package sharp. Good, dependable knives make time spent cooking so much more pleasurable and efficient. So far, I'm very satisfied with this one!

by far the best knife I have used
We kill cut and wrap our own beef, chicken, and Turkey. I can grip this handle even when my hand is covered in melting fat (think butter) the blade holds an edge very well. And it has just the right amount of flexibility to curve around hip bones without gouging the bone or cutting the meat. I use this knife for everything but cutting hard vegetables like potatoes or sweet potatoes. But do also use it to slice soft veggies like tomatoes. I have tried many knives this is by far my favorite.

Fantastic filet knife
I enjoy fishing and this knife is perfect for filleting any type of fish: Mahimahi, sea bass, red snapper, trout, etc. The strong, flexible and sharp blade has a perfect taper that makes filleting fish a breeze... It's so good, I usually get a crowd of people at the dock watching me quickly and effortlessly filleting fish... This knife actually pays for itself as it greatly reduces meat loss. When buying this knife, please be sure to also purchase the Victorinox 6" leather case, which snugly fits this knife and enables you to safely carry it when fishing or hunting. I highly recommend this knife. It is superb and very inexpensive for the high-quality materials used and craftsmanship.

Turned out to be the most convenient and consequently most used knife in my collection. So, after about 5 month of using it daily: Good: 1. Perfect length for 99% of kitchen tasks. 2. Perfect width for 75% of kitchen tasks. 3. Comfortable handle. 4. Good design: when you place it on table, handle weight is enough to keep the blade from touching table. You might think otherwise, but I personally love that. 5. Good steel quality. Nothing spectacular, but it holds sharpening long enough to be not annoying . Bad: 1. Well, it's not as flexible as I anticipated it to be. On the other hand, it makes it more universally useful. This one and a powerful chef's knife for heavy duty tasks -- and all your kitchen needs are covered with just two knives. Verdict: 5 stars.

Super sharp
I gave myself a small cut washing it after use. I used it to remove the bone from a large pork shoulder roast and it did the trick. The blade will bend a follow the contour of the bone. Just be careful as it is super sharp. Don't let a kid use it or drink and carve :-)

Don't turn your back on this knife
OMG! I have NEVER had a knife this sharp. It was so sharp I was like, walking with it held at arms length in front of me, just in case. I warned my wife to step back as I carried it to the kitchen. This thing is "horror movie" sharp. All kidding aside, I really enjoy this knife. I trashed my boning knife years ago, and finally bought a new one. This steel can take an edge, and keep it. You will like this knife. Just don't piss it off.

great value in a boning knife
I don't break out the boning knife too often so when I do I have a tendency to be messy. I love the grippy handle. It provides a solid grip even when you get stuff on your hands. The blade is sharp and just thin and flexible enough to do the job but heavy enough that it doesn't feel like a fillet knife. I doubt you could find a better bang for the buck boning knife. Definitely not as pretty as the other knives on my block but certainly gets the job done.

Love the sharpness and the flex
This has the perfect amount of flex for boning, I feel so satisfied boning a chicken with this compared to what I was doing before, its like night and day really. I had no idea how easy and satisfying it is to use the proper tool for the job. Ive used this for multiple different things and its always a pleasure. The fibrox handle is one of the best inventions ever. I love the grip on this and the feel in hand, balance is amazing.

High Quality Knives
Product, Price, & Service. Last year my wife said she had seen a Henkel knife that had a curve to it and wanted on to add to her set. I went to the store where she said she had seen the knife only I could not find the knife she described in fact I went to 3 other stores looking for this knife no luck. So I turned to Amazon and came across a 3 piece Victorinox set with a birds beak knife, with good reviews I ordered her a set only to find out X-Mas that this was not what she wanted. Fast forward 1 year and that 3 piece set has become her favorite set and she the bird beak just might have the number 1 spot. All forgiven, in fact this year we bought our son and daughter the same 3 piece set as well as the steak knife sets. Oh and she wanted another one for herself for our RV. Funny Thing about these Victorinox knives they do strike you as a real high quality knife until you use it the sharpness and ease that cut is a real joy We will be adding more Victorinox knives in the future
