I first tried Bumble Bee Snow's Ocean Chopped Clams when the state issued a temporary advisory to not consume fresh clams because of arsenic levels. My Clam Chowder had been specifically requested by a birthday party guest of honor. It was the first time I'd used canned and I was sure the final product would be subpar. Luckily, I found some tips online about using canned clams, the most important making sure not one grain of sand would be found. That was accomplished by separating the liquid and the clams, rinsing the clams multiple times and processing the liquid through layers and layers of cheesecloth. When I served the finished vat of chowder, I half expected to immediately be busted for using canned clams. I wasn't. Every since, I've used canned. Living near the beach and multiple fresh seafood outlets, people make assumptions and I let them. These big cans make buying canned economical and I love the savings with Subscribe & Save. I wouldn't try to pass them off in more delicate soups or featured with pasta, but in creamy thick chowder or deep fried fritters, they can't be beat.
I buy the 51 oz can of Bumble Bee Snow's Ocean Chopped clams from Amazon Prime and keep the unused portion in the refrigerator. I add it to various potato chowders or potato soups with cream, etc. to make clam chowder. My favorite is to add clams to Bar Harbor condensed clam chowder. Since this chowder is condensed, I add 3-4 tablespoons butter, 3/4 cup of cream, milk and/or half and half, along with 3-4 oz. of Bumble Bee ocean chopped clams and 3-4 oz. of their juice as I simmer all in a saucepan. I really like a lot of clams with a lower ratio of potatoes so this comes out perfect. This makes two fairly big (approx. 13-16 oz) bowls of really rich chowder. I put in a heaping teaspoon of cassava flour to thicken, but that may be too thick for some. I use Otto's Cassava flour, also from Amazon Prime, but I imagine any flour would do. I buy the Bar Harbor condensed clam chowder 6 cans at a time on Amazon Prime to get the best price.
I purchased these for clam chowder. There is a lot of juice in the can (about three cups) but there is also about 2 full cups of clams inside one can. The clams are of real good quality and taste. Worth the money and save time opening a whole bunch of different cans of the small cans of clams. Also, you can buy less clam juice. My chowder tasted amazing with this.

It's the convenience of it being in one large 3.3 pound can. I use it for clam chowder soup, white clam sauce and freeze it in smaller size containers. It's great. Dinners done in minutes. For those that dont know this, CLAMS HAVE THE HIGHEST IRON CONTANT OF ALL FOODS.
I love these clams. I measured 17.3 ounces of clams out of one can, the rest was juice. I used it to make dairy free NE style clam chowder. I used raw cashews and chicken broth to make the cream. It was delicious!
I'm glad to say that these 12 bottles were perfectly packed and traveled well. No breakage. Clam juice is useful for steaming clams or mussels; it needs to be in clam chowder, and I have been known to add lemon juice and a little tabasco sauce plus ice cubes, and drink it down on one of our hot summer days. The sodium and potassium in this drink are good for restoring mineral balance when one gets too hot in summer weather.

If you want them to be more tender, just braise them for a while. These a great to add to canned clams chowder if you want a protein boost and a quick meal.

Add clams, a big handful of chopped parsley and white pepper and salt to taste. Thicken slightly with a slurry of flour and water. Add a pat of butter. It's a winner. They are also great in clam dip. Yum
