I have a particular admiration for products that offer a lot of performance for their price point. This is such a product. At it's price point, it is much more affordable than a Deba knife made by a famous maker from an exotic steel. But it appears to be made from a reasonably hard stainless. Out of the box it was sharp enough to be usable, but not sharp at a level that is typically associated with a Japanese kitchen knife. However, the edge sharpened easily. Just a few minutes on the water stones made it razor sharp. The balance point of this knife is about an inch forward of the handle, which makes it just a little blade heavy in a pinch grip, which I like, even more for a knife with the purpose of a Deba. Edges along the back and heel of the blade need to be sanded right away as they are a bit sharp out of the box, enough to cause discomfort. That's not a defect, it just means the company chose to focus manufacturing efforts on the cutting edge. This knife has a right handed blade, they offer one with a left handed blade for a bit more. The back of the blade is 3.5mm as stated in the description. It stays at 3.5mm all the way from the handle up to about 2 inches behind the point, where it begins its taper to the point. The blade of my knife measures 5 7/8" from tip to heel. The distance from the heel to the tang is 1 3/8". The strong thick backbone makes me think the knife will do a great job cutting/chopping through fish bones and such. I find the oval handle of plain white wood to be very comfortable. It is tightly secured. It looks as though it would be easy to replace if necessary. Overall, this knife meets my expectations for quality, fit, form and function, and I'm happy I didn't have to spend more. I am not a professional cook, but I cook almost every meal I eat and I like using good tools in the kitchen. I think this knife will handle any job I have that calls for a Deba.

My favorite knife to filet fish

I really like this product and got it to cut large fish. After doing research, discovered that a deba knife is mostly used to fillet whole fish. Just wish the blade was a little longer.
