Out of the package, razor sharp and very stiff which is what I wanted. The included plastic sheath was appreciated too! I had a bit of commotion going on right after opening and lost my focus for only a moment winding up with a slight nick for my reward after only a slight brush with the blade so best respect it. As for edge durability and resharpening, I can't speak to that yet but my first impressions are I like it very much. The price wasn't hard to take either. When it requires resharpening I'll come back and let you know how it went. Update 3/12/19 So now I've sharpened this thing a time or two and I've had no problems returning it to razor sharpness. It literally glides through meat with very little pressure. I would definitely recommend this knife, so much so that I intend to purchase a third one since the second one I had previously purchased mysteriously disappeared, probably to my daughters kitchen!

This knife is sharp and perfect for everyday use. Because of its price, I don't have to be super careful unlike expensive Japanese knives such as Shun or Miyabi. When cutting up a whole chicken, I use this Mercer knife rather than a Shun or Miyabi and it is super sharp and does a great job.

Overkill on the blade materials, this thing is sharp. The wavy edge blade is just right for breads, and I remember it being advertised as a bread knife. But it makes a terrific cake knife, which is what I use it for. The handle feels cheap, but it is doing it’s job nicely. The offset handle design helps when cutting through a cake, as my hand does not hit the table when I am cutting.

I spend four to six hours every Sunday meal prepping, I spend about 30 minutes a day during the week cooking and cutting up food from what I meal prepped for my family (wife and two kids) and when I say these knives make my life better, I mean just that. They take an edge quickly, they retain it, they wash easily, they grip while they are wet and over-all I cannot under-state the usefulness of a good kitchen knife. People will talk about their super expensive knives, and while these aren't cheap (I bought it for around 20 dollars for a single knife), they are not the 100 dollar knives you find people raving about and they do the job often times better. Please, for the love of all that is good, get a good knife in your kitchen. A good knife, a good iron skillet, and gas stoves make the world go round. Buy this knife, even if you already have it. Buy it again, put it away for the day when you need it.

I always thought you had to spend a lot for a quality knife. A bunch of ole boys told me you wouldn’t beat Mercer for the money so I got this boning knife to process my deer. First thought was it is much more stout than I imagined it would be judging by the photo. It is a plastic handle but it’s a good sized grip and the blade seems super solid. Was delivered sharp as a razor blade and worked great for deboning and parting my deer. For the price you just plain can’t beat it. They’ve made a believer out of me, I’m going to buy multiple Mercer knives.

This is now my favorite knife! I love that it is a little more hefty than most commercial stamped knives. The blade is very, very sharp, so those that are used to a dull blade are going to need to be VERY careful at first. There handle is wide, and it has a great ribbed section where your thumb and fingers go (if you hold the knife the CORRECT way). I love the fact that it is so affordable--to the point that it is disposable when you drop it or if someone accidentally puts it in the sink. I absolutely recommend this knife! Questions? My favorite paring knife that I had for decades was somehow lost. I had a hard time finding a replacement that was the right size but also not junk. I stumbled across this Mercer knife on Amazon. Its cost was less than $3, but it was very well reviewed. It turns out to be a small miracle. It's made of top-grade cutlery steel and is delivered literally razor sharp. It holds that edge quite well. Value, defined as quality divided by cost, is extremely high. I'd recommend Mercer knives without reservation if they're all like this little paring knife that was priced so low as to be almost free.

I work part time as a Sous Chef at a wedding/event facility. Worked in a kitchen either full time or part time since high school (I'm now 45) and this is Excellent knife, The Chef De Cuisine I work for has told me if I leave it at facility it becomes "the Kitchen's" knife and therefore his. It will slice through watermelons, cucumbers, tomatoes, onions, potatoes by the pounds without a hiccup. Just hone the edge when done and ready for next day! I do have 2 sets of Shun knives (Classic set stays at home and Sora Set travels in roll to facility) this knife is right at home next to them, besides I am not spending over $200 on a hand crafted 10" Shun. I am ordering the 12" big brother to this knife this week.

I enjoy cooking and at one time I owned my restaurant. I have a collection of knives prices from a few dollars to a couple hundred dollars, each for its own purpose. One of them I reach for most frequently a small knife just like this. It does not have to be fancy but it needs to be sharp, flexible, and versatile, Being a cheaper knife (and it gets sharpened more often), I need to replace it sooner than my other knives. This knife is perfect for that purpose. Its thin, its light, its flexible, its and can be sharpened easily. The price is so good, that, I bought one just to test it out. I won't hesitate to buy more when it comes to time.

I've bought several paring knives that were an epic fail when it come to peeling potatoes or turnips. I have rather small hands and most either had too big of a handle and/or the blade was too dull.......making the task awkward, uncomfortable, and unsafe. This little knife is super sharp and small enough to make quick maneuvers around your spuds. I haven't had it long enough to know how well it sharpens when needed but, at this price, I'll just buy another!
