Now I just want to find more things to sharpen!
I was prepared not to believe the reviews I'd seen for this before. I was so ready to try it out and be disappointed and feel like I wasted $9. Boy, was I wrong. I can't believe the difference a sharp knife really makes. The AccuSharp makes it so easy to get that perfect blade in seconds. Nothing to plug into the wall, no moving parts. Just a very straight-forward product that works exactly how you hope it would. There are instructions included for opening the tool and flipping the sharpening blades around. If, somehow, your sharpener gets dulled, you effectively get to double its life. Nowadays, this feels like getting two for the price of one. Trust America's Test Kitchen like I did- this is the best knife sharpener for your money.

Used on several styles and quality of knives
I initially saw a recommendation for this sharpener on America’s Test Kitchen and I thought I’d try it out. I’ve tried sharpening kitchen knives with electric sharpeners and with stones and I just never ‘got’ it. I eventually just sent them out for sharpening. This tool worked first time. And I have tried it on everything for the past week. READ THE INSTRUCTIONS. I find thumb placement and a light touch is the trick. I have an old pocket knife my son gave me and that is finally sharp. Not razor sharp. I only used 6 or 7 passes. But now it slices through boxes and rope with ease. I have a Wusthof knife that was beginning to dull and so I used this carefully (light strokes). It handles tomato’s like butter. Nice sharpener. Scissors and a small hedge trimmer All worked great.

A necessity for any kitchen
We have been using this for just over four years, and wish more than anything I had known about them years ago. SO much faster and easier than the old whetstone and oil method, and a lot more efficient than the ceramic-type ones that I've tried - and, much less expensive than either of those. The blades are reversible, and then replaceable - easy, and inexpensive. Whenever we have visitors, they always comment that they wish they had knives as sharp as ours. I also usually warn them, if they want to help in the kitchen, that we keep our knives sharp. I've given several as gifts, and am grateful to Cooks Illustrated magazine for recommending this. Can't recommend this product highly enough. After numerous decades in the kitchen, this would probably be one of my top three recommendations. The other two might be USA Pans and a KitchenAid mixer...

THE BEST THERE IS.
These are the best knife sharpeners. Period. I use to work as a deckhand on a charter fishing boat. We would sharpen our filet knives down to needles. These are the only sharpeners we trusted. AND! you can unscrew the sharpener and flip the little blades JUST ONCE after the one side gets dull.

Best thing since sharp knives
Love this thing! Throw away the knife steel, those things are garbage. Once your knive bevels are broken in to the angle of the carbides, all it takes is three or four pulls to go from squishing ripe tomatoes to being able to cut them super thin with ease. Obviously not for major reshaping or removal of large dings. And it does end up with slight rippling on the bevel, but as long as you vary the speed at which you pull the sharpener, it is minor. A professional sharpening is surely superior, but who wants to have their knives sharpened every week or two? And don't be scared. The first time you use it, it seems dangerous to have the knife upside down, but it is very easy to use and fairly idiot proof. And if you don't like my ancient rusty KA-BAR, keep it to yourself. High carbon steel is the shiznit.

I fought the urge to respond to individual bad reviews
I can use a stone and get a razor sharp edge but I am really not patient enough to do that on all my blades. Use the common sense you would when using a stone. You do not just saw the blade back and forth on a stone and expect to get a finished edge. I am guessing that most the bad reviews got defective units. 10 percent is not unusual on the cheap, mass produced, no QC items, otherwise I just don't get it. If Accusharps QC is better than I give it credit for, than guess what... your doing it wrong. This Accusharp works great. A truly dull blade will take more time and more than just a couple of swipes to restore and you are going to remove metal even on a stone. To those folks who say this will leave nicks and gouges, your doing it wrong and have less patience than I do. Try light more even pressure and read the instructions. If your pressing down hard enough to shred the guard, you are doing it wrong and using way to much pressure. If the guard is hitting the edge at 90 degrees its a manufacturing defect look at the V shape inside the sharpener it should be straight and clean with no nicks. We use a Mora 8.1 inch multipurpose knife as the main Kitchen knife and even with the mora rep for steel it still needs constant attention to keep the razor sharp edge that we all love. Not only is the angle on this just about about a perfect 22 degree match to the scandi grind, just using it with a very light touch 2 or 3 passes and it remains arm hair shaving sharp. Enough to take on the toughest turnip. This sharpener is faster than a stone but as I said it still needs a little common sense to use it. I'm sure it can be a blessing to those who just need a sharp knife and don't have the time or skills to use a stone.

Best sharpener.
When my husband first bought it, I look at it and said nah...it look cheap but he said, hey it is made in U.S.A. I kept it and use this for years. It is scary to use it at first but after you get a hanged of it using it, you will fall in love with it. Seriously, this is the best sharpener I ever owned. I am still using my old one to this day. I bought a second one to put in my farm house so that I have sharpener whenever I need to sharpened my knife. It look so simple but it does a very good job. Do not put too much pressure when you are sharpening your knife. Just be gentle so that you will not ruin your knife.

Fun times with sharpening
I've had this for a while now, about 6 months. It works like a charm. I have a Victorinox chef's knife, it was getting pretty beat up and dull. It took a few times to get the blade to stay sharp, again because of how beat up it was. Now it stays sharp through just about anything. I run it through the AccuSharp about once a week to maintain the blade. I can go from cutting raw sweet potatoes to thin slicing tomatoes. I use my knife daily. The other day on a whim I used the AccuSharp on a Ginsu (don't judge me) Santoku knife to see if it could redeem it. It took quite a few passes, but it did actually help. I thought it was beyond hope and it was left in the drawer forgotten. There is a major nick still, but it is actually usable now. I've used it to sharpen those cheap little paring knives too. So far it's worked on every blade we've put it to. We recently gave one to my father in law and he went to work sharpening every blade he could find! So be warned, you will go hunting for things to sharpen.

Excellent product
I highly recommend this to anyone who uses a knife. I am a cook, I have many people I work with now purchasing these after they have used mine and I also bought one for my step-dad and he loves it. Well worth the price, I use these on my knives at home and for work. Please read the directions and use accurately as a co-worker injured himself by not following correct procedure, remember, these are knives and are very sharp, you are sharpening them! Common sense people. Remember also to use a steel and hone your knives, please research if you do not know the difference between sharpening and honing.

Very Good Sharpeners
For years I had been collecting high-end kitchen knives made by Shun, AlMar, and other companies. I always had these knives sharpened professionally at my local knife shop. Many of my friends are restaurant owners, and I noticed that they never used these expensive knives. Typically they used Dexter and Victorinox knives with plastic handles, and they are much less expensive. The secret is the AccuSharp! They are amazing! You don’t need $150 knives in your kitchen.
