Sharp from the get go
Really don't like to review a product until some time has passed. Just used the ultrasource 6 " boning knife once to clean a bunch of snapper and it worked fine. Kept its edge throughout the cleaning process. Only time will tell how it keeps its edge after a few more trips to the cleaning table. After I used it the first time it sliced a soft tomato perfectly. The handle doesn't have the soft touch grip that the dexter-russell has but that is not a big deal. Since people are so intent on a star rating I will give it a five for now. I'll come back to this review if I find it is difficult to keep sharp.

Great value for money
For the minimal dollars paid, this knife is a beauty. The blade is semi-flexible as described and came with a very sharp edge. The handle sits very comfortably in the hand and isn't too slick. The 5 inch blade is great for those awkward boning angles a carcass can offer and while semi-flexible, has enough lateral resistance to give good precision when needed. So far it has had minimal use, so how long the edge stays sharp is still to be determined. All indications are that this is a knife that I'll be very happy to use as I disassemble wild hogs in central Texas.

Great Boning Knife
This is my first semi-flexible boning knife and it's fantastic! I deboned a turkey, sliced peppers, cut up roasts, you name it and it's cut everything with ease. I do wish it was a bit more flexible but for the price and buying it online, I'm very pleased with it. The handle is also very easy to hold. Its texture and size provide a solid grip which is critical when your hands are covered with mean juices. I've always used a chef's knife for cutting meat but this is far, far superior. If you cut meat even once or twice a week, this is well worth the money.

I bought this knife for clean roasts prior to smoking. Very sharp blade and have used it several times and have not yet had to sharpen it.

Although it is suppose to be semi-flexible it is very flexible. The blade is very thin making it very easy to hone with a steel and keep the edge razor sharp. The handle is just like a Forshner regarding non-slip; for the price, I am extremely happy and may buy another for the house. Trimmed middle meats with precision and performed great while boning out whole pork loins!!!

I’ve tried a few different boning knife brands but am happy with these
I am a hunter who will process about 100-200 lbs. of deer meat during the hunting season. I’ve tried a few different boning knife brands but am happy with these. They come sharp out of the package and the blade flexibility worked well for removing meat around bone. I’ve been burned a few times by the “luxury” knife sets that end up dull and/or broken after a few uses but these seem to have the quality of those without the big price tag.

BEST KNIVES EVER!!!
Ordered a couple of these for processing Chickens. We went through 50 birds without resharpening. Later I processed a couple deer, and now a couple pigs. Only had to sharpen a couple times. The blades hold their edge well. I have literally put several hundred pounds of meat in the freezer with the help of these knives. I will be buying again.

A Very Decent Knife
No bones about it, this boning knife is top-notch. It is well-balanced, has a nice feel to it, and it slices, dices, and gets into those nasty little spots where a regular knife is overkill. When using this knife or any knife, always remember your ABCs ... Always Be Careful!

Good but inexpensive knife
I bought this little knife especially for trimming fat off of brisket before smoking...and I found it also actually does a good job of boning...flex of the blade is perfect..holds its edge adequately...FYI, there is no knife that never needs honing and sharpening....but this knife's blade does hold its edge well... A great value!!!
