Want A Razor-sharp Knife?
I read about this product in an independent review of knife sharpeners. I am serious about sharp knives in the kitchen. Mine are Wusthof, so good quality, and I've been using a Wusthof sharpener with mediocre results. I received this sharpener today and ran a couple of my knives through it. About 3 or 4 swipes and I had a razor edge on every knife, including my prized Norwegian Helle. We'll see how it holds up long term, but I could not be more pleased!

It works! It works MUCH better if you know a few things…
Like others, I am giving this a five star rating for its usefulness and value. There are a few things you should know to get the most from this nifty little gadget. The suction cup grips well on smooth surfaces: granite, glass, smooth tile or formica. Tip 1: It grips even better if you spritz a little liquid on the rubber suction cup first! You can use spray cleaner which is always handy in most kitchens. Spritz it then stick it. As an experiment, I adhered ours to a window and it stayed firmly on that vertical surface for three days! You CAN use this in the vertical position, BUT you should know a couple of tricks. If you wet the suction cup with tap water, there will still be microscopic bugs in the air, in the water and on your hands. If you then leave the sharpener attached to a window or the side of your fridge long enough, eventually mold will form. Tip 2- You can stop mold by using rubbing alcohol to clean the rubber base AND the surface to which it is attached. By then using spray cleaner (with ammonia) or a disinfectant spray (instead of water) for increasing suction holding power, you will kill any contaminating critters. That way, you can keep your sharpener handy but out of the way for easy use whenever you need it! HOW IT WORKS… This operates on a different principle than sharpening stones. Stones and most traditional methods ABRADE metal by friction. This uses small carbide edges that SHAVE metal instead. Since carbide is MUCH harder than steel, it literally cuts or “shaves” the edge. That is an advantage to those without sharpening skills, expensive stones or patience. This method does have some potential downsides, all of which you can overcome with a little knowledge. You must understand that scraping or shaving the edge always produces microscopic fractures along the edge. The effect is like a super-small serration. That makes knives slice through tomato skins more easily because these tiny serrated “teeth” grab the skin like a saw blade. That’s a good thing for most kitchen tasks, but it is horrifying to some knife aficionados and sharpening experts. Why? This carbide “scraping” or “shaving” action removes too much metal for a purist’s liking. Also, unless the carbide’s edge is very sharp, AND your technique is sound, you can actually ruin a knife edge in a split second of inattention. MANY Modern pro knives have adopted the more acute 15 degree angle of Eastern knives instead of the traditional 25 or 30 degree angle of Western chef’s knives. Since this is factory set to the older wide angle, it is NOT recommended for Japanese knives or any modern high-quality knife with acute cutting angles. THAT is the crucial clue! Tip 4: DO NOT USE THIS on hand-made $300 knives! For those expensive professional tools you should either learn to sharpen with traditional stones and methods, get a quality electric sharpener (Chef's Choice 15 Trizor XV EdgeSelect Electric Knife Sharpener with 15 degree angle settings) OR send your knives out to a professional service for sharpening. For most users, the wide edge-angle is OK, especially for everyday kitchen and work knives. What we lose in acute angled edges, we gain through the microscopic serrations of this carbide “scraping” method. Normally, a wider angle produces a more durable edge. So even though they might not cut as easily, long lasting edges are good for rough chopping and in commercial kitchens where they must process hundreds of potatoes, carrots or chicken parts per shift. Normally, a finer more acute cutting angle provides smoother cleaner cuts. That’s better for fine knives that sushi chefs use. Acute cutting angles are also better for decorative cuts with difficult things like onions, carrots and fancy “Frenched” fruits and vegetables. Those are the “normal” considerations. However, when sharpened to a 25 or 30 degree angle with carbide scraping, those wide angles are NOT more durable! That’s because the edge has those microscopic serrations which bend over easily. That means any knife sharpened with this type of tool will require more frequent sharpening. It also means your freshly sharpened kitchen knife will deposit microscopic chunks of steel into your food. Before you panic about that, think about technique! There are ways around all these problems! Some users LOVE this type of tool because it is practically foolproof. I agree. It is. So long as you do NOT press too hard and use progressively lighter and lighter strokes, the carbide scraping method will not leave hundreds of miniature steel chunks in food for your family to ingest. Tip 5: Technique! Start by pressing lightly for the first few strokes, then slightly “de-weight” the knife as you sharpen. Make final super-gentle strokes with only the lightest, softest pressure. That reduces the tendency of carbide scraping to tear the edge violently. Tip 6: FURTHER… If you follow up with a gentle honing, (using a steel) that will remove almost all the potentially deciduous metal chunks. Remember! A so-called “sharpening steel” does NOT sharpen! It only repairs and straightens microscopic inclusions on the edges. In this application, the steel does double duty by not only refining and repairing the (intentionally) rough edge, but also by removing the “burr” left by the cutting action of carbide. Tip 7: Use a small drop of oil on the sharpener’s carbide blades, AND apply a little oil to your knife BEFORE you sharpen! Olive oil is OK. The Carbide scraping method this tool employs will still work perfectly with lubrication. If you’ve ever seen how CNC machines use carbide cutting tools with copious cooling / lubricating liquids, you know they still cut despite the constant shower of coolant. The crucial difference with a small hand-operated sharpener like this is, the oil prevents excess friction which tears the fragile knife edge. It is that tearing action that causes more inclusions. Avoid the tearing action with a little oil, and the sharpener actually sharpens instead of scraping your knife’s edge to bits. Tip 8: You can use a scraping method like this to establish a good cutting edge, then refine that edge with traditional strops. Stropping compound is cheap. So is leather or MDF board to put the compounds on. I use a 4” x 12” MDF board with leather adhered to both sides; One side with green ( fine) compound; the other with white ( super fine) compound. Stropping only requires an extra minute or less. It’s worth it! You get all the advantages of this fast and foolproof carbide scraper, PLUS the refined polished edge that not only lasts longer, but keeps metal out of your food. Pliant leather automatically produces a micro-bevel or rather a “micro curved bevel.” THAT is what makes your edges long lasting AND super sharp. Tip 9: Obviously… we must ALWAYS CLEAN a freshly sharpened knife before use on food! You knew that, right? Please tell me you knew that! No one wants industrial diamonds or silicon / aluminum carbide in their food. In conclusion, this thing is GREAT for less expensive knives, especially stainless steel kitchen knives that get used for many rough or big jobs. Those “daily-user” knives are usually less than $40 bucks; the kind everyone has… the kind that always benefits from a good sharpening! With this type of sharpener, anyone can get cheap wide angle knives to cut almost as well as expensive narrow angle knives, at least for a short while. It does not require expert technique or long practice. You can do it well the first time. You can get fairly good results with this sharpener even without this information. I only offer it to add something useful to the other five star reviews. Last point: THIS particular sharpener is good because it automatically uses one versatile cutting angle. That is what makes it (virtually) foolproof. There are other manual carbide sharpeners available that do the same thing, but a different angles. Also, there are hand held scrapers that allow a knowledgeable user to adapt to ANY cutting edge geometry. You do not need to be a sharpening geek (like me) to understand and use this inexpensive little tool. In fact, I got this exclusively for family members who do not know or care about sharpening. When I must cook at my in-law’s house for holiday dinners, I bring this instead of my precious chef’s knives. In a few minutes, I can sharpen several of their criminally mistreated kitchen knives without fuss or mess. That makes me seem like a double hero. (both chef and sharpener) If you have a drawer full of decent but dull knives, this is a good investment! Demonstrate this on your friend’s and relative’s knives, they will love getting these as presents. Use this information and my tips, you can get nearly professional quality edges!

Believe the hype.
Really impressed with this little sharpener. It sharpened my 35 year old pocket knife almost down to the hilt to the point I can shave hair on my arm with it. Not a dull knife in the house. Even took a single edge honed knife and turned it into a dual honed edge in maybe 30 passes just to see if it could. The suction cup on this is really strong, which is really helpful when it comes to getting a consistent edge. It is a lot smaller than I thought it would be. It fit in my crowded junk drawer easily. Maybe the size of a silver dollar.

It's a tiny little bad*ss!
I haven't been able to find a decent, low priced knife sharpener since I bought my Wusthof knives. Until now! I decided that this was the last low price sharpening alternative I would try. I mean, for around $13, if it didn't work, I wouldn't be out that much. Man this thing is awesome! Seriously, it's easy to use and really tiny so it's not taking up any room. Most importantly though, it really sharpened my knives right up and took no time at all. I read some reviews where they talked about the metal shavings. It seemed to pull a lot of shavings off the first time I used it, but the 2nd time it was a lot less. I haven't tried on my serrated knives yet but I trust it will work fine. Even sharpened my steak knives with it. I also really like the fact that before it was delivered, the manufacturer reached out to me with a small instruction manual and then followed up with me after I received the product. Bonus: this is a small company so they are working hard for happy customers and I love supporting the little guy! Tips: Like others said, a little liquid on the counter is needed. I used tap water that I just sprinkled off my finger tips. The suction cup on this thing works great. To avoid any mold buildup and to get rid of the metal shavings, I rinse and dry this thing after I use it. Since it does leave metal shavings, you definitely want to clean the area you use it in so you don't contaminate your food. The Sunrise Pro is so small I was able to find an area where I don't normally do my food prep to sharpen my knives. I found using the hand not holding the knife to apply slight pressure to the top of the blade with a couple of fingertips (you don't need much for this to work) to help guide the blade was helpful. Especially on curved blades like a chef's knife. All in all, I'm very satisfied. I do wonder about the durability of the SunrisePro but only time will tell. If this thing lasts me a year and I have to replace it, I'll probably be okay with that considering the price and the results.

Finally a sharpener that gets my kitchen blade REALLY sharp. I've bought countless blade sharpeners and this is by far the absolute best I've ever used.(and NO I am NOT paid by the company, just an amateur chef who loves a really sharp knife) This little beast is small for easy storage and the suction cup {so far} really grips any clean flat surface and doesn't slip at all once the lever has been pulled down. It only took me 3 slow pulls to get a deadly thin edge. I have already used it to cut potatoes, onions, and my personal favorite, tomatoes and each time it was like cutting through warm butter...love...love...LOVE this product and will definitely be buying more....just hope they don't screw it up and change things like most companies end up doing?!?! Hahaha

This is a predatory sharpener. The suction of the bottom is outstanding. This may be the best kitchen knife sharpener i will ever own. Yes, it is that good. This little guy is tougher than King Kong. And the blade sharpening is outstanding. It takes the blade to an incredibly dangerous edge that is what i want. This is a little monster of sharpening. No wonder it seems China is trying to copy it. The quality... wow.

A great little sharpener!
The SunrisePro Knife Sharpener works as advertised. This fact alone rates three stars. But if you're looking for a great, all-purpose solution for your kitchen or garage, I recommend this sharpener. • It really sharpens well (see note at bottom) • Simple to use • Even sharpens serrated blades (our previously hopeless bread knife is very sharp now!) • The locking suction works on smooth, flat surfaces and is very handy. Note: You'll know when you're being "heavy handed" if you see a lot of metal shavings after 6 swipes. It will be sharp, but I've learned with less pressure, 10-15 swipes renders a much better cutting edge with fewer filings. This sharpener is not meant for very expensive knives. If you're like me, you don't own those. I had a block of knifes in need of some basic sharpening, from the bread knife to the steak knifes. Ran them though the SunrisePro and it makes a huge difference. REMEMBER to thoroughly wash your knifes after sharpening.

Easy use safe works great.
Just got this, I work in and industry setting and use a sharpening stone and have had the plant mechanical sharpening equipment used on my knives worn out, beat up and worn down. Useless in a matter of months. I have bought new knifes and now use a v notch hand sharpener which works good for a quick tune up, but after using the sunrise pro on a knife at home never sharpened ,as I pulled it through the V notch I could feel every Nick bur ,it grabbed and snagged and then began to get smooth until there were no more resistance, WOW frightening I mean as in Sharp ,it sliced through paper it is so Sharp I'm afraid to touch it. This sharpening tool has a strong sucktion and keeps your hands safe , please don't use your thumb or try to shave your arm because you might be going to the hospital.

It Does Work
We live in a small town with a local expert who hand sharpens knives on a whetsone. The problem is that he charges $6 per knife and they need sharpening every couple of months. My brother turned me onto this little gadget. He has far more expensive knives than I do and they are far sharper. I thought it was worth a try. My Henkels knives are now incredibly sharp, slicing through tomatoes so thinly, when before, I was using a bread knife b/c my chef's knife was so dull. I do see very small shavings from time to time. I suspect it is paring away more metal than it should, but I have never worn down a knife in 50 years of cutting, chopping, and slicing, so I'm not too concerned about shaving a few years off my blades. Recommended.

BEST KNIFE SHARPENER AROUND....PERIOD!
OMG is the only thing that comes to mind! After researching any number of GOOD home knife sharpeners from $5 to $100, I stumbled upon this one and its very good reviews. So....I bit the bullet, purchased one (the ORIGINAL not the knock-offs you see). We have a collection of some 15 high end knives that had been sharpened by me using a lesser pull through sharpener. I set the SunrisePro on the countertop and followed the simple instructions. With just a little pressure on the top edge of each knife, i drew each blade edge through the tungsten-carbide cutters. After four or five pulls-through, I could see some almost microscopic metal shavingS accumulating on the top of the unit and a little on the counter. You could feel the knife taking on an edge it never had before! When I finished one knife, it was so incredibally sharp to the point of being intimidating! I simply could not belive how scalpel-like sharp the edge was now. I went through all 15 knives from paring to big 12 inch carver/slicer and each came out the sharpest they perhaps ever had been. WOW! Now we have an entire knife block filled with superbly sharp kitchen knives. Trying each one out on different meats, fruits, etc, you can hardly feel the knife as it slices cleanly through whatever you are cutting. Just "resting" the newly sharpened knife on a tomato, the edge actually began to cut through the skin with NO downward pressure. Seriously! I will not insult my review by saying something like "For the money...." It may simply be the best overall home knife sharpener around at ANY cost.. And yes, I even sharpened our garden hedge clippers to razor like condition. Bravo to whoever designed this. Even if I wear it out, I will certainly buy another! Nuf said. Dr. Z
