Where have you been all my life, if you have never made your own Kimchi or Sauerkraut you don't know what you are missing, Honestly I don't even let mine ferment for 15 days, five days and I was good. It was delish and it didn't mold. The instructions are in Korean so please checkout Youtube so that you know how to use it.

I bought the 1.6 gallon size to make sauerkraut. The first batch is almost right. I put a little over 5 lbs. of shredded cabbage in it and it filled it about 1/3rd full. I doubt that my wife will ever use it because she hates sauerkraut. What she loves about it is there is absolutely no order coming from my working sauerkraut. Last summer I made a few small batches of kraut and in her words "it stunk up the whole house". She asked me this morning how much I paid for it. Told her $30. She says, "Well worth the money". Enough said # :-])

This thing is perfect. I made wimpy kimchi and it still smells like 10,000 deaths (tastes awesome, though!). This keeps the stink contained and the kimchi crispy, and I don't have to worry about any pickling weights or anything like that. It was definitely worth the money.

This container has saved my kimchi! I usually buy kimchi in a larger size from my korean market since its over an hour drive from me, but I'm the only one who eats it in my home so often times as I'd get halfways through the container it would start to go very very sour and I couldn't enjoy some of my favorite dishes with over fermented kimchi! I came across this container and wow it keeps kimchi tasting freshly made for months! You can also use it for other produce as well like cucumber salads and what not! I'll be buying more in different sizes as they are so handy.

Absolutely love this container. At first I was a little skeptic thinking this is same as any ordinary container. However this has an inner lid that you push down to release gas to prevent the food from molding and the fermentation will do its magic. The outter lid closes and prevents the smell from stinking up your kitchen or fridge. I've made Kimchi which holds 1 decent size napa cabbage and it's incredible, so yummy!

The only negative thing I can say about this is that I wish I had bought a bigger one... I still might. I started experimenting with making my own Kimchi but I was always struggling with finding ways to keep the top of my batches from getting exposed to air. This container can be used to store purchased Kimchi or for making your own. It has the top outer lid which snaps very firmly and then it has an inner lid that is like a plunger with a plug. You push down the plunger lid with the plug open to squeeze out all the air and then insert the plug. It seals up very tightly and doesn't leak air or smells. That's a big plus because while I love Kimchi, my wife does not and the smell makes her nauseous. You can't detect that there is Kimchi in our fridge with this container and when it's washed, it doesn't retain any smells.

I love this container! The vacuum seal function is perfect for kimchi. We tried one batch in two systems, one with the usual plastic storage and ziploc bag method I've been using, and the other half of the batch went into this. I cannot even tell you how amazingly different the resulting kimchi was after a month. The batch made in this container was crisp, pungent, and spicy-- whereas the storage batch that I had to check every week with the plastic container was a little slimy and more salty than spicy. I will be using this e-jen from now on.... and save up for the larger models if I made a family-sized run! :) Very happy with this system!

I like to ferment different things here and there, normally it's a hassle because I need to either burp what I am fermenting and stir it up or other things. This was easy I actually set the kimchi up and forgot about it after the second day for weeks until tonight. Protip: if you plug it check on it a few days later. The c02 build up will push the inner lid out of place. I left mine on the counter and it could not be smelled with the plug out and outer lid on. We ate half the kimchi just now and will probably demolish the rest tomorrow.

I love this fermentation container! The easiest, cleanest, and odor free way I have ever fermented. I bought the 11L size and it fits perfect on a refrigerator shelf when ferment is complete. I haven't had any mold or bacteria growth when I have used it. It's one of my favorite Amazon purchases so far!

This is wonderful for making pickles, and I plan to buy another to keep my coffee beans in, as I buy the 3 lb bags from Costco. The inner lid will keep the excess air out, and work in the same way as my Airscape Coffee Container, which I love, but it's too small for more than a 12 oz bag.
