Doesn't rise well at all, but flavor/lower sugar are incredible together.
Wow, this mix was yummy-a-licous. Plus, it has lower sugar than any other GF cake under the sun. I really loved it and will be buying more. One thing I found really odd: You have to add your own vanilla to both the chocolate AND vanilla mix. That's really weird, to need to add vanilla flavor to a vanilla cake mix LOL! The cake mix does NOT rise well so the suggested cake pan sizes are totally off. The second time, I used a tiny loaf pan and I had a REAL cake, not a flattened pancake saturation. If you use a smaller cake pan, this mix is awesome!

GET THIS!
I made my first batch of flatbread last night with this product. I am on a gluten-free diet and have tried every single solitary gluten free bread out there, plus a few mixes. I was losing hope that I would ever actually like one. My husband (who is NOT gluten sensitive, but who adores me enough to sacrifice with me) and I both LOVED this bread. It's not wheat, but is definitely the next best thing that I have found. Not only are the ingredients wholesome as opposed to so much of the processed gluten free products on the market these days full of corn starch or other equally obnoxious fillers - who wants to eat a cup of cornstarch! Just because it's gluten free doesn't make it healthy. Anyway, this was ridiculously easy...dump all the ingredients that you probably already have in your pantry in a bowl and spread it out on a cookie sheet for the flatbread style and bake 20 minutes. Seriously! What other bread could you have in that length of time - no kneading, no rising, no waiting. We had our first organic brandywine tomato from our garden as a sandwich last night and I was fully satisfied that I had had a real sandwich. I just ordered 4 more boxes. I highly recommend this company's product. I also love their gf saltines.

Absolutely amazing!
Amazing! Just amazing! We use an egg (not substitute even though you can as suggested in the instructions) and coconut oil. Blend all well in the mixer and place them on a baking sheet with a wet spoon (use wet fingers to flatten them as well). We use an aluminum backed parchment paper as a liner and they come off easily (first time we put them directly on the backing sheet and it was a nightmare to remove them). As far as the taste - oh, the taste! They are GOOD! They are so good that my kids cannot have "normal" cookies anymore! Which is a good bad thing, but in the same time a bad thing, as these are expensive! We are currently trying to use a combination of almond, coconut, tapioca and arrowroot flours to come up with our own mix, but these are outstanding! You can taste the chocolate just enough (not too much though, but we like this as we are not fans of cookies loaded with chocolate), but it feels as if there is brown sugar inside, and they have a great mouth feel. We are now baking them with convection baking and for just a tad more time to have a nice crunchiness around the edges... Oh nuts, just writing this made me crave them... I guess I gotta buy more...

Moist and tasty
This mix was one of the best gluten-free that I have tried for my granddaughter. I made cupcakes and added dairy-free chocolate chips and, because the batter was thinner than a normal cake batter, the chips settled to the bottom. I saw that by filling the cups half full of the batter and then adding the chocolate chips to the top. The batter had thickened up a bit by then and some of the chips stayed in the top half of the cupcake. They baked up just fine and were moist the next day.... unusual for other mixes and recipes I have tried with gluten-free flours. I would definitely recommend.

Birthday cake!
My FPIES son finally got a birthday cake!!!!! I've been on the search for a cake mix for the last 3 years that my son is not allergic to! It worked and my son was so, so happy!!! This will be his treat cake for all the desserts that he can't have!!! I will buy again.

Wonderful chocolate muffins, but take note of quantity
These delicious chocolate muffins have been part of my daily diet (breakfast) for over a year now. Obviously I love them. I usually prefer to bake from scratch but these muffins are an exception. Five stars for flavor, ingredients and ease of use. Just wanted to note that the quantity is inaccurate. Each of these boxes yields no more than nine (9) regular sized muffins, not 12. I always get 9 muffins with a slight muffin top (not as big as those pictured on the box). Just something to keep in mind when considering quantity or nutritional information. As an aside, this is the only product I buy from Simple Mills. Tried everything else they offer on Amazon and wasn’t impressed, but this could be because the bar was set so high with this chocolate muffin mix!

Favorite pancakes
As light as it is, this mix produces waffles and pancakes with excellent flavor and texture. Though my partner has diabetes, he still loves good food, and many low-carb mixes we've tried have ended up in the disposal. This is excellent, and even though I don't have dietary limitations, I still prefer this mix to any regular type. Easy to prepare, and to mix in additional ingredients like pecans, banana, etc. Highly recommend.

If you are used to a lower sugar diet and used to coconut sugar as a sweetener - these are fabulous. I made them for a birthday party (added extra coconut sugar as suggested on the box) and with homemade frosting and even people who aren't on a special diet loved them! These are a lifesaver for birthday parties for me, as we have several allergies and food sensitivities in our house. Amazon has a great price, too.

Best invention EVER!!!
LOVE these!!!! they satisfy my chocolate cravings with grain free sugar free yumminess. Sometimes I even grate a zucchini or a beet and add it to the mix, can't even tell! I'm sure you could figure out how to make these from scratch easily enough and for less than $6, but the convenience factor plus the fact that I know the ratios are perfect and it will be delicious every time is totally worth it to me

Best Muffin Mix for anyone, paleo/GF only an added bonus
My absolute favorite Banana Muffin mix! I am celiac and have gotten my homemade breads and baked good recipes down to a science that most people I share food with don't even realize what they're eating is gluten free. I mastered a GF banana muffin/bread on my own without mix, but Simple Mills was always a little bit more moist and overall better. They're easy in a pinch, save time, and taste great. I feel good about the ingredients I am consuming. I use avocado oil and it works great. Amazon's price is usually right on target with Legman's, +/- $1. I always keep this mix in my Amazon cart and if the price drops, I buy, even if I have some on the pantry shelf already.
