Rating a coffee in some ways is like rating a flower: if you like flowers they are all pretty nice, just some you like better than others. I liked this coffee just fine! It's taken me a while to post a review because it took a while to learn to roast. I tried the air popper method and 'twas a total bust for me. Not that the popper is a bad method, just didn't work for me. I went pioneer style and pulled out my cast iron skillet. That's when things got fun! The first two roasts I aimed for and got a gorgeous city roast. Alas the flavor was vauguely grassy. Not unpleasant, just not what I wanted. Finally, grabbing courage against fear of burning coffee and getting that familiar sb over-cooked flavor, I left beans in long enough to achieve a dark roast. Cue the angelic choir..! Beans were luscious deep brown (see photo) and the aroma was intoxicating! FYI, I prefer cooked coffee aka no pour over, no pour through, straight up cooked for 1-2 minutes, so take that into consideration as you eval this coffee. I roasted, rested and prepped beans and had an excellent cup of coffee! It was a pure, rich, smooth coffee flavor with no hint of bitterness. Yes, yes, yes! Totally worth the effort. One warning though, these beans are ca-ca-ca-caffeinated!! I almost busted out a moonwalk, kick-ball-chain, finish with a ninja turtle flair right there in the kitchen after a half-cup of that dark brew. Yessir, that's a fine coffee. I do recommend.

I am new to bean roasting, this is my second bean sample. The previous was a Mexican bean, I found it ok but weak. I bought this one based on the reviews. I agree, this is some amazing coffee. It's also good cold, and reheated in a microwave. This batch was 3/4 cup, roasted in cast iron, stirred constantly with a wire whip. Heat setting was slightly cooler than for a steak. Time was 13 minutes in preheated pan. Almost every bean popped loudly, given enough time. If it seemed too hot, I backed the heat down to the six o'clock setting for a minute. Once it cooled off, heat was turned back up. There was some chaff, most of which was completely charred by the end. When done it was sifted in a metal colander, and I fanned it by hand to speed cooling. I would rate this as a medium-dark roast. It has now been 24 hours, the aroma is the best I've ever smelled, bar none. A fascinating, complex, indescribable sensation. It seems to change and draw you in. The beans are beginning to ooze oil droplets. I am going to give it 2 more days, then grind half of it. The remaining sample will age a full 6 days. Am looking forward to the results. Get this coffee, you already have all the gear needed to fire it up like a pro.

The beans are smaller than I'm used to seeing (they didn't swell in a pan roast, but in a true roaster, they did), but given that my favorite bean (Tanzania peaberry) is the smallest bean I know of, I wasn't worried. I only pan-roasted these in a skillet, so the color was uneven with smells of burned popcorn and roasted nuts. I only let the things degas for 2 hours before grinding what was the best smelling grounds I've ever had, and it made a supremely smooth cup of coffee. I've ordered this one twice now and have compared it to several other green beans (South American). This coffee is still my favorite of all of them by far. It's just smooth. One thing, though - it roasts quickly. Where 16 minutes would normally lead to a light roast, it makes for a city roast here. 15 minutes is perfect (including a 5 minute cool down) <- These times are with a Nesco Pro augur-style roaster. FreshRoast would be less roast time, like 5 minutes(!)

If this shipment is indicative of the quality and taste I can expect this coffee is definitely on my buy list. I won't be using any fancy words to describe my experience. My main concerns are aroma and taste and this bean exceeded my expectations. All coffees leave an aftertaste and so far this one has left a pleasant one. No bitterness or acid taste. If you are roasting your own coffee this is worth a try. I think I recall seeing several complaints about having trouble grinding the beans. I have to say if you are serious about your morning cup don't be a scrooge when it comes to buying a coffee grinder. If the description gives a shipping weight of a pound or two then look further. I have had the same grinder for a few years now and this coffee ground very nicely. I will definitely be buying this Ethiopian bean again.

Have you ever roasted your coffee beans for a ceremonial Ethiopian coffee? I have never ever drunken such a good coffee. Fantastic. It is definitively an experience I will make again and again for all my happy guests! DE-LI-CIOUS. It has a taste of hazelnut and when roasting it (with a perforated pan shaking incessantly the beans above the gas more or less 7 minutes until it becomes black and oily) it perfumes the entire house!

I greatly anticipated this roast after reading rave reviews about Yirgacheffe beans. These beans lived up to the reviews. They arrived in heat-sealed packages, free of sticks/rocks, etc. I hand roasted them using a low heat for about 8 minutes. At the beginning of first crack I raised the temperature to a medium heat. At the end of the first crack I reduced the heat to low for a gentle finish, 18 minutes total time. The result can be seen in the picture. A great bean, producing a fine cup of coffee.

I took a chance ordering for the first time from this place because I wanted to try these beans. Hadnt heard of the company before and everything was an all in moment for myself. The beans got here very fast even during holiday time, and arrived in a very sealed bag and great packaging. I roasted them up and had one of the best roasts I've ever had, everything came out with almost zero imperfections. I tried cupping the beans the following morning after roasting while using an aeropress, chemix, and french press. All of them produced immaculate results! Thank you for such a wonderful experience. 5 stars all around I would highly recommend this seller!

I'm new to home roasting. This is the second bag of green beans that I got. This time from Ethiopia! What a difference one bean from one part of the country can taste from another! These have a smooth tasted compared to the beans I got from Costa Rica. I don't know if it because my first bag was my trial and error one, but this one really hits the spot on smell and taste! I'm still experimenting and figuring out what my next bag will be. For me, I liked these beans a lot! It also comes in a nice durable airtight bag! Good Job! Additional comment: 12/19/15- I really enjoy these beans! I don't know why, but they seem to roast easier...? I don't know why, but from first crack to second seemed more predictable. It's a bit hard to explain, but these beans are good! I like a city roast. So, I stop midway between the first and second crack. And with these beans, it just seemed easier to tell just before the second crack was to happen. Maybe because the beans arrived super fresh! Great beans! Thanks!

If you haven't roasted coffee before, be prepared to be blown away. I just finished my first cup and immediately wrote this review. I've tried a few others and this is my favorite. Very balanced, a few others had a grassy taste or sour aftertaste. This is very smooth with a bit of a nutty profile which I really love. I did a medium, maybe City+ roast in an air popper (lid on) for 7:30. Very consistent bean size, roasts well and smells great afterward. My favorite beans I've tried, possibly ever.

This brand is from the mountainous Yirgachaffe region in Ethiopia. I have seen it at my local coffee shop in small batches and loved it. I have been wanting to roast my own and picked this since I am a arabica bean fan and can't find light roasts anywhere in whole bean form. I took this to the first crack stage and stopped and it is awesome. The light roast didnt add a whole lot of complexity but it was very clean, plenty of caffeine, and fresh. Very distinctive with a slight not overly bitter finish. This bean is awesome and combined with being fresh roasted puts it out of this world.
