I've mentioned the following in another rating for the Dalstrong product and company... but I have to repeat. My wife has had crushing medical issues that have handed her some very difficult circumstances, physical, to where she has challenges in working in the kitchen for instance. When we purchased our first Dalstrong knife, for the first time in years, she worked in the kitchen and had some enthusiasm, thanks in large part to the excellent tool she had in her hands. It made THAT much of a difference. It fit her hands, balance, ultra sharp, just a joy to work with. And as I am sitting here, she returned to the kitchen in large part due to the fine Dalstrong knife. I attribute her ability to work and prepare a dish in large part due to our original purchase of a Dalstrong Damascus knife. I then purchased a hefty Dalstrong chefs knife, something I wanted. Danged if she hasn't picked up and used this knife as well.. I never would have thought she would try and use the Dalstrong Chefs knife... but she has. She loves it too. Now today... we had purchased this new knife for her. So I return home and I hear something I don't usually hear. She was singing. In the kitchen. I walked in and she was chopping and cutting up a bowl of various veggies for a Mexican meal. I know all this sounds schmaltzy but after years of very difficult challenges, seeing her develop enthusiasm for the kitchen... This eve, to hear her singing... am not kidding... her main tool in the kitchen was this new Dalstrong knife. I know this sounds like a screwy review... but it is not to me. Being able to work in the kitchen, and she indeed pays a price afterwards as in chronic pain, but having the right tools makes a huge diff. This Dalstrong knife is beautiful, fits in her hand, is balanced in her hand, makes fast work of what she puts in front of her. And the capper is, she is in the kitchen, making quick work of food items, and she was singing. So you bet I will have some good things to say about this tool. And no, I am not a paid person.

I own a half dozen Shun classics and very much enjoy using great knifes. I stumbled on the Dalstrong's the other day and with the price being what it was and the positive reviews I had to have me one. The first thing I noticed was the weight they are heavier than Shun which for me is a plus. The Dialstrong is a more substantial knife and doesn't seem as fragile. Another plus. Razor sharp out of the box and shipped in a protective saya in a nice form fitting foam box. Yet another plus. I did my prep work for a couple of days with my new favorite knive. Only time will tell how the beautiful knife holds it edge. I do use a honing steel before each use as it cuts down on sharpening. This is a very nice knife and I will be purchasing a couple of others, not because I need anymore knifes they are that nice. Update, Beautiful looking knife but doesn't hold an edge. Became dull within in a 1/2 dozen uses so does a Shun,,,the difference is it takes a lot of work and effort to restore the Dalstrong,,,,Shun not so much a few stroke on a honing steel and the Shun is ready to go. I expect knifes to dull with usage,,I also expect them to hone sharp shouldn't have to do a full fledge sharpining after a few usages.

This is my first Dalstrong in the Shogun series and it definitely will not be the last. This is beautiful knife. It is very well crafted and finished and is simply striking to look at. But, it is even better when you start using it. It is very sharp and well suited to any general kitchen task. It is light and nimble for things like trimming steaks, slicing fruit, etc. It seems to be holding its edge well, but I am VERY picky about not abusing the edge. If you are one who cuts on glass, metal, tile, etc., NO knife I have ever used will stand up to that. If you never touch up the edge with a whet stone or a diamond steel you will NEVER have a sharp knife. That is NOT the fault of the knife. I own and use the Gladiator series and am very pleased with those. This Shogun knife is a step ahead. Great knife. Great price. AWESOME company to deal with.

What a difference a great knife makes. So far, I have just used these to shred cabbage and thinly sliced cooked steak and it did both perfectly. The steak was paper thin and the cabbage wasn't left with sad huge chunks from where my cheap set of knives just can't do the trick. We immediately ordered the paring and big knives since the medium knife was so great.

So after a long research session of two weeks, and wanting to buy a more expensive single knife, I decided to pull the on these three knives. The Chef knife, Santoku, and Utility knife. Like you are probably wondering, can all these 5 star reviews be true? Do these guys even know what a great knife is? Well as an owner of Tojiro, Wustof, Mercer, Bob Kramer knives, and a top culinary student, I can assure you these knives are the truth. First the packaging and included content is top notch. You're not gonna wanna throw these boxes away. Secondly, the knives. From the weight when you first pick it up, you know you're dealing with a serious though out piece of professional equipment. It fits perfectly into your hands. The beauty of it makes you want to just stare it, but this work of art is crafted to do work. And do work it can! A hot knife through butter isn't this smooth. If you have ever owned sharp knives, this takes that sharpest and multiples it by 10. It's that sharp!!! Getting extremely thin slices with ease from the most novice of cooks is nothing for these knives. My Chef Instructor was so impressed by them, he has been using mine all week to cut and prep food for class. And he is very well known chef in the Central Texas area with years of experience in high end kitchens. So run and get you one,two, or three. I promise you, you will not regret it. I know you haven't heard of the company before, nor did I but do your research. And listen to people who love food and know a great knife. You really have nothing to lose.

I was looking for some good quality kitchen knives to replace my ragtag collection that didn't cut or chop very well (and maybe never did!) I didn't need a huge knife block with an assortment of knives, only a few. I purchased the Dalstrong Chef Knife, the Paring Knife and the Utility Knife, thereby qualifying for an 8% discount from the purchase price. I had never heard of this brand and was relying on the positive feedback that other buyers had posted. The knives arrived today and I am thrilled. The blades for the Chef's knife and Utility Knife are made of high quality German forged steel. The knives are beautifully balanced with a nice heft. The blades are VERY sharp and come with a protective scabbard. The packaging is amazing - Like other reviewers, I felt a little guilty discarding the cases! I would recommend these to anyone who is looking for high quality knives at a reasonable price.

These are good knives. I was confused by an earlier review indicating VG-10 was German, so I'm posting a few comments. VG-10 is a distinctly Japanese steel, which is much harder and so can be sharpened to a narrower edge angle than regular German steels, which are softer have a wider angled edge that will dent and curl rather than chip like the harder VG-10. The thing they have in common is they are pretty high in chromium and both are pretty corrosion resistant. The most common German kitchen knife steel is X50CrMoV15 which can bang around a home or pro kitchen and not rust or chip (when you're teaching students you really need this). The VG-10 is a good choice for those who take a little more pride in caring for their knives. The G10 handle material is something I've looked for in kitchen knives for a long time, it is way less slippery when greasy or wet than micarta or any of the resin impregnated woods (which are great for show), and although I still prefer the Forschner/Victorinox handles nobody is making a VG-10 with that. In my non culinary knives I love the G10 for endurance and non slip. Although knife characteristics are very personal, I have worked as a professional in a kitchen, culinary school and I have a collection of Shun, Miyabi, Forschner, Henckles, Bruntmore, Dalstrong and a bunch of kitchen supply grade and I'm a sort of knife steel aficionado. I love ZDP-189 (and it's German copy Twin Cermax) and while super hard, these will rust, VG-10 is a great steel if you take care of it. Funny but there are remarkable similarities between Dalstrong and Bruntmore even with very different knife sizes (see photos) both are VG-10 with G10 handles from Amazon

I own over a dozen quality knives of every style and shape...this Dalstrong utility knife is my most used and favorite knife in that collection. The feel, balance and durability is beyond reproach...just a joy to use. Plus, it fills the gap required for all non standard cutting jobs...and performs flawlessly. Just simply my "go to" knife hands down, and a must have in anyone's knife kit. Get this knife, you won't regret it!!

Beautiful knife. Came in a really nice gift box with some other goodies. The instruction manual was very well put together and provided useful information for a first time user of a nice knife. I bought this knife and a boning knife and wanted to keep a good edge but didn't know a good whetstone company so I e-mailed David and Dalstrong and in less than 24 hours (probably closer to 12), I had a response with a link on how to sharpen it. I've only had this knife for 2 weeks and don't have an complaints. Prior to this, I've only had Wal-Mart specials so I can't give a great answer to how good they are.... but they're amazing compared to the Wal-Mart knives.

Not only is this knife incredibly aesthetically pleasing (the details are gorgeous!), but it works better than almost any other knife of its kind I have ever used. Because of my recent purchase of the Dalstrong knives I am now getting rid of my Global set! The balance is great, the craftsmanship is as good as it gets, and it cuts like a dream. Not only is the knife great, the customer service provided by the company is amazing and some of the best I have seen. Moral of the story: I highly recommend these knives. I only have 3 so far but I have every intention on completing the Shogun set.
