I have tried so many different varieties from all over the world. This is consistently the best coffee you can roast period. I roast in a Behmore 1600AB and roast is from light to full city. This bean does it all. A couple of things I noticed. 1. Rest time is much longer than other beans. I actually won't brew this bean for a minimum of 5 days. The off gas cycle takes longer. Even at 5 days you will get some acidity in the cup, by 7 days it's on like donkey kong. 2. Lighter roast are ok, but you really need to give these beans the heat to get them to release flavor. Med+ makes it come alive. 3. Flavors are consistent in almost every batch. If you are new to roasting, no question buy this bean. Give it to your friends and become a Coffee Rock Star. 4. Now the bad news. You can only get it in 5 pound bags. I would love to buy this in bulk so I don't have to make orders twice or 3 times /month.

The Yirgacheffe FTO is the best coffee I've tried out so far. I order a 5lb bag about once every 2 months, and experiment with other origins every second or third order. Nothing comes close to this in consistency, taste, and quality. I roast up to right before the second crack, but its forgiving and still tasty at FC+. Holds the "roast" taste better than other beans without tasting burnt. You can smell the notes as its cooking. Not every bean does this, I've found. These are right about at, or a hair below Sweet Maria's quality. For every 5-pound bag, I'll pick out one small handful of defective beans in total. (about five beans per batch, lol) I'm not any kind of cupping taste-master, but can say it has a dark, fruit taste, maybe earthy, but NOT berry or citrus (I usually dislike those). I drink primarily as espresso and hot and iced americano. Something about the iced americano is the perfect fit for these beans. Really brings out the flavor. My boyfriend drinks these in his girly-ass iced mochas. We use a mix of hersheys and hand-shaved dark chocolate (I use a fruit peeler), whole milk. Best in town. I have never had a quality problem with Yirgacheffe FTO, but some of the other origins were...pretty bad. If any of your bags end up full of defective beans, don't agonize over it. This company guarantees all purchases, you just have to do your part and say something. Then order the Yirgacheffe FTO to replace it :)

Went great with a little bit of leftover Nicaraguan Single Estate I had left over and makes a fantastic espresso and pourover at just a smidge into second crack. Behmor 1600 Program A 1lb Approx. 19 mins

I love this coffee!!! I normally roast coffee to a medium or medium dark roast just for myself, I took some as a hostess gift when I stayed with friends in Seattle. Their daughter, a barrister, thought it was some of the best she ever tasted.

I do not know a lot about roasting coffee, but I did roast this green coffee and I like the taste.

The Yirgacheffe is my go-to bean. I roast it in a FreshRoast SR500 and have consistently great results.
