After reading about the earthquake in central Italy in August I learned that Amatrice was famous for it's sauce, I was interested. After eating Bucatini all"Amatricana in a fine Italian restaurant in NYC I knew I would have to make it. So I went on line and found the recipe, it looked like a no-brainer but I didn't know where to get guanciale. Amazon came through again, the meal was just the best.

Delicious and authentic

We recently returned from Italy and Rigatoni Greci was one of our favorite pasta dishes. I tried to recreate the recipe but unable to do so with pancetta. Guanciale is no where to be found in West Palm Florida, so I ordered this thru Amazon. The Guanciale arrived on time and intact. What a difference in the recipe - I highly recommend this product and provider.

excellent for CARBONARA UNFORTUNATELY PORK AND FLORIDA WEATHER FOR TRAVELLING DOES NOT MIX. WHEN I PICKED IT UP ON THE DOORSTEP, IT HAD BEEN IN A VERY HOT TRUCK ALL DAY! I TOOK IT OUT OF THE PACKAGE AND IT WAS EXTREMELY HOT. I FRIDGED STRAIGHT AWAY AND I AM HOPING FOR THE BEST. IT WILL BE HARD TO REORDER DURING THE SUMMER MONTHS UNLESS IT IS SHIPPED OVERNIGHT. It's like bacon but

So yummy!!! Was introduced to this at my Italian cooking glass in Rome last month (Carbonara anyone?) Until I can find it local I'll be ordering this..soooo worth it. It's like bacon but better

Nice smoky flavor

Used with fresh pasta & turned out really good. Different flavor than pancetta. Would buy again, had a a nice smoky taste.
