Quality knife for a good price
I've use a cheapo 14 dollar santoku for a couple of years and figured it time to upgrade. Being used to such a light weight knife the gladiator certainly feels heavy, and big. Out of the box it's a beautiful knife and I'd almost want to keep it in a display case however I bought it to replace a work horse. I intend to use it for pretty much everything as a don't really have any other knives. So far it's been fantastic for cutting meat, vegetables and even bread. Anyways I love the knife, it's at a great price point and probably lasts a life time if not a few. Customer service was also outstanding as I felt like responding to one of their follow up email after the purchase. I'll very likely purchase more in the future.

Realize now that all my previous knives were junk
my very first serious kitchen knife. This is not your grandmother’s knife. Sliced through the tomato, through the cutting board and through the kitchen island in one swipe! All kidding aside, it’s gorgeous and the presentation was awesome too. Well worth the money. It will last a lifetime if cared for properly.

Update from 2 to 5 stars. While it took a couple of tries, Dalstrong really came through. As I said in the original review, I loved the knife but it had a small defect that hurt the function of the knife. They requested I contact them after I left this review and I did. They were awesome and sent me a new knife immediately with expedited delivery. Their knives are amazing and at an excellent price point. And now I can say their customer service is over the top as well. Very happy, they earned their 5 star rating. ------------------------ At first I thought this Santoku knife was great. Very solid feel, looks very well made. Then I discovered that when chopping vegetables or really whatever, only the front part of the blade can contact the cutting surface and complete a cut. Anything towards the rear will not be cut through because the heavy bolster extends past the blade (see photo). I thought this had to be an error in manufacturing so I contacted the seller. Nope, I was told, this is an feature to protect the blade and is common with German knives. What?! Canadian company, Japanese style, made in China, and it's a problem with German knives? Maybe this is just a problem with the Santoku knife, which is a style I normally really enjoy, but this one is so frustrating to use, and that was such a poor excuse, I'm thinking of returning it.

Wow! Just wow!
All I could for 5 minutes after I opened up the package was "wow". As a Sous Chef I've seen and used plenty of knives so imagine my surprise when I found myself completely out in a trance by it's beauty. They sure take a ton of pride in their knives and it shows. After I got over the initially phase of being blown away by just how gorgeous this knife is I decided it was time to just see if it could pass the most important test; cutting. I gathered up some onions and green bell peppers (it's Philly cheesesteaks for dinner) and had it. It sliced like a dream And the cutting edge seems like it's in a good position to stay sharp but only time will tell but first impressions were fantastic and I think I'll be enjoying this knife for a while.

Great customer service
Update: I reached out to customer support and the were very quick to respond and were able resolve the issue within just a few days. I am very impressed with their customer service, will definitely be buying from them again. Original: I wish I would have heeded some if the other reviews. This is an exceptional knife, however it does have a problem. One reviewer had described the bolster at the heel sitting too low, not allowing for full cut through on the end of the knife closest to the handle. I thought this was a one off and no way a company like this would make knife that almost completely eliminate the ability to cut through on the heel. However, I recieved mine and sure enough, there is a few millimeter gap from the bolster hitting the cutting board before the full knife edge resulting in the inability to cut through on about the back inch of the knife. I do a lot of my chopping and mincing in this area of my knives. I see this as a big design error that will only get worse as the knife is sharpened and honed through the years.

The great quality and customer service makes all the difference! I bought this Santoku as we really like to use this knife profile for the larger vegetables. At first I got a defective knife that wasn't performing as I would expect. I then contacted their customer service and they were amazing! They shipped a replacement right away which I'm really happy with! It's hard to match the quality of this knife for this price range, specially with the incredible customer support. After this I bought two chef knives of the Gladiator series to give as a gift to a couple of friends, and after testing them for a while (I would not miss this chance :) ), I have to say that they are also VERY good! Again, it's hard to beat the quality for this price range.

Beauty Out Of The Box
Such a beautiful work of art straight out of the box. As another reviewer said, I just looked at it for about 5 minutes and couldn't say a word. I've had it for about an hour and have sliced tomatoes, lemons, and some salmon steaks, chopped some celery and carrots, minced up some dill, and just for the heck of it did a basil chiffonade because I could. The blade is super sharp out of the box, but I think a welcome home honing is in order just to smooth things out and get to know the blade. Three years ago I bought the 7-inch Victorinox santoku and I'm surprised at how much bigger the Dalstrong 7-inch knife is - see the accompanying photo. By the way, there's no comparison in the heft and obvious quality between the two - the Dalstrong goes light years beyond the Victorinox product. This is hard for me to say because for years I've sworn by Forschner/Victorinox as the best knives out there. I stand corrected. So, first impressions are wonderful and I'm very happy with my purchase. [Edit after 2 weeks' use] First impressions were correct. I've used the Dalstrong knife for every job in the kitchen and it has more than proven itself as my new go-to knife. It held its edge slicing through two 7-pound cured and smoked pork roasts making precision, thin cuts for bacon, countless tomatoes and tons of other veggies, herbs, and meats, and just needed its first run across the steel yesterday. The edge came back after about 15 or 20 passes on the steel just as sharp, if not sharper than when the knife arrived. If you're having any second thoughts about the knife, don't! It's a masterful piece of work and a fantastic tool.

Outstanding! Simple, yet technically superior and elegant design. Great balance, feels like an extension of the hand as any good tool should. Very well balanced. So far, the best knife I've bought in a very long time, and at a price well below that of some of the worst that I've ever bought. Packaging and presentation are top shelf as well. Somebody went to the Apple school for product image/packaging. Not that it adds anything to the quality of an item, but packaging and presentation are important. In my book when a company spends the kind of money/effort to develop this level of packaging, literature, and even the protective sheath, it says a lot about their commitment to the product; which kind of does add to the quality in an indirect way.
