Last set of knives I will ever have to own!!!
I ended up completely replacing my German made Henckel knives, I had been using for over 30 years. I was tired of having to hit them with steel every time I used them plus the monthly sharpening. I have been extremely happy with these Dalstrong knives so far, after two months of daily use, I have yet to have to sharpen them, and they are still sharp enough to shave with. I did purchase an extra Paring knife, just to practice sharpening. I would recommend that anyone interested in these make certain to view youtube on how to properly sharpen Japanese knives, sharpening is a time consuming proposition that turns into a labor of love. They are a handsome set of knives that really catch the eye and draw your attention to them. The handles fit my hands perfectly and the balance is great. They are a solid well built piece of hardware, that I am sure will last the rest of my lifetime, as well as the next generations to inherit them. I would agree that the some of the extra items shipped with these knives is overkill and the lapel pins are just cheap junk that found the trash. The plastic sheath is very nice and as sharp as these knives are is almost a necessity for personal safety.

This is my second Dalstrong knife. The quality and workmanship are outstanding and it is "sharp". I sliced my first loaf of bread tonight, my special formula beer bread and it did an outstanding job. I won't say there were no crumbs from the crust but there were not many. It works in the little slicing guide with plastic posts that I have used for years with a chef's knife. This one does not drift to one side and grind against the posts as some others do. Outstanding knife. A keeper.

It feels like a weapon
This bread knife could be used to ward off intruders. It feels like a weapon. Anyhow I used it for the first time. I made a loaf of bread and put it down on my bamboo bread cutting board. I used the knife like it said, to make sawing motions. This knife just floated through the bread. There were no crumbs. NO CRUMBS!!! I couldn't believe there were no crumbs. Anyway, this knife is also a work of art. Admittedly when I first saw it I was kind of afraid of it because it can double as protection against a home invader. My technique is not that great and I am just a bachelor. So anyhow get this knife, you will feel awesome using it.

High Quality and Excellent Value
This knife is mad sharp, perfectly balanced (I'm right handed, can't speak for lefties), and a straight-up pleasure to use. I had occasion to contact the vendor for service, and was bowled over by the vendor's dedication to customer satisfaction, so much so that I ordered the rest of the Shogun series today. I intended to give them to my daughter as a gift. But I like them so much that I may have to keep this set for myself -- and if my daughter is very, very good between now and her birthday, I'll get another set for her.

FINALLY, the Perfect knife
I bought this and the chef's 8" knife from this company. What a beautiful knife. You can see the forging that went on to make this, all the ripples of Damascus steel are like waves in the ocean. 60 days it took them to make this and it shows in every way. I have wanted quality knives forever and finally I can quit looking and simply enjoy. They both slice through food like it's butter, not even using pressure, just a stroke and it is done. Comes with a sleeve to protect the knife and also you so you don't get an accidental cut. Even that is beautiful. My husband loves the keychain and claimed that as soon as he saw it. WOW! I am so impressed. Thank you for making such wonderful knives and at prices that every good home cook can afford. If you think it is slightly pricy, think how many knives you will pay for over the years and how much time you will waste trying to slice with a lesser knife. This doesn't even come close to the over the top prices that some knives can cost yet these work just as well.

Nice serrated knife
Nice serrated knife. A bit overkill for a bread knife but with the hardness of the 'supposedly' VG10 steel, I hope to be able to use it for cutting up my clear ice blocks I use for cocktails. Its a bit hefty as well. Nice knife and for the price cant complain.

Everything I expected and more
Beautiful, sharp bread knife. Serrations are fairly widely spaced and aggressive. The handle, though on the smaller side is definitely still usable for larger hands. Packaging, as seen in the product review videos, is the best I've ever seen for a knife. Would definitely recommend for someone looking for a fantastic sub-$100 bread knife.

CUTS ARTISANAL CRUST BREADS LIKE BUTTER
I haven't found any knife as great as this one for cutting our homemade breads. When you mill your own flour and knead your bread in a pricey but serious workhorse of a machine like the Ankarsrum (and no bread kneading machine is "like" the Ankarsrum), this is the knife you'll want to cut the finished product. No matter how crisp the crust, this knife bites and holds where you want to slice. No oomph in your wrist? No worries, this knife needs only a mild hold to cut any bread as though it were as soft as butter. I no longer need a device to hold the bread and keep the slices uniform; I can just eyeball each and let the Damascene steel do its work. Just as "you get what you pay for," every craftswoman is only as good as her tools. This one will be an heirloom.

I bought this bread knife to replace a very old knife that I gave to my daughter. I watched her one evenning slicing crusty bread with some difficulty so decided to replace this knife with a better and sharper one. So I went about reviewing bread knife reviews and read customer evaluations. The Dahlstrong knife was one of the hgher graded knives especially for the very crusty type of breads. So my son in law and daughter have had the opportunity to use the knife for crusty breads as well as softer breads. They loved it and commented on the hefty feel and impressive cutting capability. I have personally tried this knife on bread and am similarly impressed. The knife blade is wide and the length of 10.5" with its heft make slicing effortless. I have a Ken Onion ~10" Shun knife with similar specs but a bit wider and with a taller offset handle, I love this knife too but feel there is little difference in cutting and feel. Of course the Shun's price of almost three fold higher is only justified by my love of good knives and of a limited production Ken Onion design.
