Perfect knife for a beginning chef.
This is not a $300 knife. Which is great, as I am a new pantry chef with no prior experience. The first thing this knife will do, is teach you how to hold and handle it. Screw up, and it will draw blood. The light weight means your hand tires less, and gives you more control in your cuts. It is also made from a lower grade metal, and is easy to sharpen. Thats another skill a new chef needs to learn. It took me 2 weeks to finally get the edge right, and I haven't had to touch up the edge in 2 days now. My chef who uses a $500 knife as his primary, was impressed with this thing. IT DOES NOT RUST QUICKLY! I don't know what the reviewers are doing to rust their knives in one day, but I soak mine and cut crap for 5+ hours a shift, no rust. I leave it sit in tomato juice and have onion bits on it. It's fine. Don't use any type of scouring pad on it though... it scratches. After using everything from a $10 house knife, to a $1100 Shun slicer, this knife is on point in price, style, and functionality. The saya is very nice, (the blade guard) not many knives come with a saya, so that's one hell of a deal for under $100. You don't have to open the saya, just slide your knife in or out like a sword. Grab yourself a cheap whetstone with this, and welcome to the kitchen.

Sharp professional quality Japanese steel
WOW! I mean that. WOW! I've never owned such a high quality piece of cutlery before. I'm stunned at how absolutely professional this knife is. It's "head and shoulders" above any I've ever touched. It arrived in a high end, double packages professional gift box which included care instructions and a silk polishing cloth. The knife came with a protective sheath that, rather than allows the knife to slide in like a sword, actually has rounded pegs to open the sheath from the side. This drastically the possibility of you cutting yourself while removing our inserting the blade. The knife is powerfully sharp. The edge is so razor sharp that it slid through a hard granny Smith apple as though I were slicing warm butter. I was able to cut paper thin slices. Some were so thin you could see through them. That's how precise this blade is. Would I recommend this? ABSOLUTELY!

I cant say enough about these knives. These are amazing knives the weight is great, excellent grips, and they are very sharp. Very beautiful to look at, they look great sitting on my kitchen counter. I'm finally able to get rid of my older set of knives I had. Been wanting to get this set, did a lot of research before buying, and finally decided to pull the trigger. Cant be more happier with my purchase. It also comes in an well packed beautiful package, so you can also give it out as a gift. Highly recommend.

Amazing Bang:Buck ratio for a real knife.
As a 25+ year veteran of professional kitchens I feel safe saying this is one of the best knives I’ve ever owned for the money. It comes nicely packaged with a sheath and some nice bits and bobs. The blade arrives razor sharp and well balanced. The only issues I saw were some rough finish spots at the pommel and some quality control issues at the tang/handle with rough edges and visible sealant. At the current price of about $75, it’s a bargain. If I told you it cost $200 you’d probably agree. For a no-worries, thrash it in a real kitchen knife, you could do far worse. I’ll leave the Kramer at home and take this one to work.

Edited (5/5): Nancy from Dalstrong reached out to me after my previous review saying that I had received a defective knife. Whether or not this is true I have no way of confirming. But I know metal is finicky and making knives is probably really hard so having some variation in the end product is not inconceivable. She offered to send me another one, which arrived last week. I compared the two knives and on the surface they seem identical. The edge looks to be the same to the naked eye (as expected), although the weight did feel a bit better on the new one (maybe just in my mind?). I don't have any metallurgical testing capabilities in my kitchen so I have to believe the metal is the same grade of steel they say it is (although my old one has a tiny rust spot already). Ok so I am pretty skeptical at this point but as soon as I tested the new knife - WOW. The difference is night and day. Now I can actually cut through ripe tomatoes like butter and make paper thin slices. I don't want it to seem like I was bribed in any way but I am genuinely blown away - both by the quality of the new knife and the great customer service Dalstrong has shown. Honestly, I wasn't expecting anyone to reach out to me and fix the negative experience I had previously. Thanks so much to Nancy and Dalstrong! Would definitely recommend this product now! Previous (2/5): I received my knife last week and have been doing a lot of cutting with it and I have to say I'm a little disappointed. First of all the sheath that I got is a little hard to open. The round clasps are a slightly off-set from where they should be so you have to try pretty hard to open it. As you can imagine, this is dangerous with a knife inside and I cut myself when I first got it open. I haven't tried putting it back in the sheath since. The rest of the packaging is nice as others have noted. As for the knife itself, I have to say it's just ok. Maybe mine wasn't sharpened as well as it should have been. I am probably going to sharpen it on my own. I understand that the mark of a good knife is less about how sharp it is and more about how long it can hold its edge so on that front I have yet to see how it does. But I at least expect the knife to come well sharpened brand new. When I compare this to an older Cutco Santoku, I have to say the Cutco actually does better. The weight is ok; not as heavy as a German knife or sure and some force is still required to cut really hard/frozen things. Overall, I'm not blown away; perhaps my expectations were too high. My opinion may change over time as I continue to use it more and I will update it then.

Dalstrong is turning me into a knife snob...
Some context: I walked by a demo table for Henckels Pro knives yesterday and was completely unimpressed. After having the Shogun gyuto for a year, I went for one of my favorite tests with their chef's knife, the tomato. The sales person immediately insisted I use a "tomato knife" on the tomato. My gyuto is easily sharp enough to cut tomatoes into paper-thin slices, and their chef's knife is still well over $100? So yeah, I think dalstrong is turning me into a knife snob. Okay, on to the Phantom Nakiri review. Pros: Dalstrong makes great knives, and this knife is no exception. The knife is well balanced, feels nimble in the hand and has a nice pakkawood handle, part of which jets out along the side for comfort. The blade shape is also excellent for food transfer. Cons: The handle is a little long for my taste, but I guess you need that extra bit for the blade balance. The handle is also not as comfortable for me as the G10 handles on the Shogun series, but these knives are also don't have the Shogun price point (or anywhere near it). The blade could have been a little smoother, but it cuts vegetables very well. And touching up the blade is probably something you'll want to do anyway with a quality knife. Or if you don't like to keep your knives very sharp (if you need a serrated knife to cut tomatoes, for example) then this knife will exceed your expectations. All in all, this is a great knife. And unless you're storming the doors of Sur La Table on Black Friday, you'll get way more value from Dalstrong than buying from a store - better still if you can catch a Dalstrong sale.

I ordered the Dalstrong DS Phantom series set in preparation for Thanksgiving this year. Myself and 3 family members used the knives over a period of 3 days prepping the main meal and all the feedings in between. The blades came highly polished, razor sharp, very well constructed and have performed flawlessly. The DS magnetic holder is well constructed and has a very strong magnetic grip (you need to pivot the handles to the small edge of the blade to remove). The holder has the capacity for additional knives to expand the set. The only drawback (for me) is the DS has a tall profile and barely fits under my cabinets. In my case an angled magnetic holder would have worked better, but is a minor detail. The blades came highly polished, razor sharp, very well constructed and have performed flawlessly. Although its only been 2 weeks, I couldn't be happier with this purchase and am very impressed with the overall quality and function of these knives.

Knife Block gets Scratched to Hell but Knives are Amazing
I was super disappointed after the first couple scratches on this knife block... and I read the directions about how to load/unload knives from it but it's just inevitable and now I just own that it is part of the deal. That said the knife block is stunning and artistic and makes such a statement next to our amazing Dacor range. The knives are really really sharp and very well balanced/ quality handles/ look great. I only allow people to use them on wood cutting boards which means most ppl in my home don't use them, just my husband and I which is fine by me. One more thing, the magnetic knife block holds more knives that are in this set, and so we were able to add a couple of japanese steel blades that we had purchased without a knife block to the display. I love it!

As a Chef who works in a busy kitchen, I was hesitant about buying this knife with a softer steel than the Dalstrongs Shogun Series which I own several. I held off weeks because nothing wowed me initially about this knife. I questioned why would they bring something of a perceived lower quality to the market. The Shogun Series X has been my go to knife since I received it. Why would anyone by this? Boy was I way off. First off, this lightweight knife begs to be held. It is so lightweight and nimble when holding it, you feel like you can do anything with it. The pakkawood traditional Japanese D handle disappears in your hand, truly becoming an extension of your body. Most blades in a real kitchen are 8 inches in length so this fits right in. It's extremely sharp OOTB like all Dalstrong knives. It cuts so well and effortlessly, I would have called it the Ninja Series because that's what you feel like when you yield this beast. I just wonder how it will hold up over the coming months. Once again Dalstrong delivers unpresidented value and quality to a crowded market. I don't know how they keep doing this but I'm glad they do. Save your money. Get Dalstrongs and be happy. Save your money because I know they have other knives coming that I'm probably gonna buy as well. Right now they just can't be beat. Sure you could spend thousands but why would you want to when you could own this beauty and pocket all that cash. ( And no I don't work for Dalstrong) ***Just one more thing. Their customer service is out of this world. On a previous purchase, the pins for the sayas became lost. I wrote them and asked to purchase some more. They responded and said they would take care of it. A week later I received a handwritten envelope from David Dallaire himself, the CEO, full of pins. And he emailed me to make sure I had gotten them and were happy. Who does that these days? One of the many reasons why I'm a customer for life**
