First I will say I am a working professional chef . I have been looking for a new knife for the kitchen and decided to give this a try. I am far from disappointed !!! I love this blade . It has a wonderful feel and great balance , not to mention it can get crazyy sharp. Yes the knife comes very sharp, bt after putting my stones on it it is sharper than I could even imagine . Very high quality steel. Effortless cutting and slicing, and after a full day I am not fatigued. Nice heft as a german knife would with the sharpness and agility of Japanese. I highly recommend this blade. will be getting another one as a backup .

After much research, I decided to pull the trigger on a couple of the Zelite knives...the VG10 10" Chef's Knife and this one, the 6" Gokujo boning knife in AUS10 steel. For those that don't understand the differences between different types of steel and how they relate to taking an edge, holding an edge and how susceptible to stain resistance, bending and breaking they are, I REALLY suggest doing some research before you spend your hard earned money. Short and sweet...the VG10 and AUS10 cores that the Zelite Alpha-Royal Japanese knives are based on are the way to go. These 2 steels are, for all practical purposes, the go to carbon steels for hardness and edge retention in knife making as far as Japanese steels go. The AUS8 steel isn't in the same league. The packaging this knife came in was impressive. There's a magnetic closure on the box and the knife itself is nestled into a form cut bed of high density, red foam. The tip is also protected by a plastic cover. The blade is exquisite...and wickedly sharp out of the box. The handle is very comfortable, the balance is very neutral and the weight is solid but not at all over bearing or uncomfortable. It's obviously a very well thought out and executed design. I did have a couple of questions that I posed to Zelite customer service via email. They were very prompt, very thorough and very professional in their communication. They left me very impressed with their level of customer care and their commitment to their product. The maiden cuts were performed on fruit....tree fresh oranges to be specific. After effortlessly quartering, I was able to shave wafer thin, see through slices from the meat of the fruit. I also used the tip to separate the meat from the peel with both precision and ease. The knife is very nimble and I'm looking forward to putting it though its paces when I use it for its main purpose....which will be trimming and prepping cuts of chicken, pork and beef for real pit BBQ. For those in the market for a very high quality and versatile boning knife, I can recommend the Zelite Infinity Gokujo with no hesitation. I'll definitely be adding to my collection.

I’m a Product Designer, a master craftsman, an ex-professional modelmaker, and a skilled amateur chef. I know knives, sharpening and knife skills. This knife is a replacement for an irreplaceable knife my Wife LOVED, that some friends lost for us. It was a very small but wide sushi knife I bought for her in Asakusa, Tokyo, and replaced the traditional handle with a cherry wood and brass/epoxy one I sculpted especially for Her hand. Needless to say, replacing it was a challenge. This one is slightly bigger, but miles better! She LOVES it even more! Plus, it doesn’t rust. Keeps an edge like crazy, super-fine angle, gorgeous Damascus steel treatment, an exquisite handle (truly gorgeous! Excellent ergonomics, Fantastic fabrication and finishing) and function like a dream. If you can swing it, buy one. You will be happy too. Makes a great gift, in a nice presentation box (paper board, with good explanation graphics and great foam and flocking interior for your model) that will flatter even the most discerning recipient. I’ll be lusting after more, I cna tell you. If I didn’t have a fabulous collection in my custom made (by me) knife rack already, I’d be running up the debt right now!

This is an incredible knife. I do a lot of cooking being retired and 70 years old. I have always wanted a really good knife, as I'm tired of thing's being hard to cut etc. When this knife was delivered their was a slight problem that I did not understand. I emailed them about 11 pm that night, and a gentleman, Sam emailed me back in 1 1/2 hours that night. Not understanding everything he was saying, the emails went back and forth for 3 days. I can't believe that their is finally a company that vales their reputation, and takes the time to help someone that buy's their products. I strongly suggest that if you are looking for a quality kitchen knife, this is the knife for you. BE CAREFUL this knife is sharp, and I suggest that after each use you DON'T put it in the dish washer hand wash and hand dry only. I have wanted one of these Honesuki knives for a long time and can say I am so happy I made the plunge and got this one. These knives are specially designed for filleting and deboning work, with their main task they excel at being striping down an entire chicken, turkey, or other game bird. The blade is unbelievably sharp and the small shaped deep blade if perfectly designed for in-close work when moving around the breast bone etc. I also used it to fillet some fish and I found the shape and sharpness of the blade made this so easy – normally I mess this up and do not get clean fillets, but with this thing, WOW! The shape of the blade means the tip can get in close and accurate, where the wedge shape means your slicing is done with your hand in a perfect position. Incredible design. I’m really glad I bought one of these specialty knives and can strongly recommend this one

I love the 12 degree cutting angle, as it is sharper and allows thinner cuts than the standard 15 degree angle. The steel is beautiful, but also slick and does not stick to the foods you are cutting. The Rockwell is hard enough with the damascus that the edge should not chip under normal use. Box and presentation is well-done. Difficult choice between the Alpha Royale series and the Executive Plus series. For the 10" Chef's knife, I would choose the Executive Plus series or the new Storm-X for the wider blade and heavier feel.

I have been slowly assembling a selection of high quality kitchen knives (mostly Japanese, or a least Japanese steel). I was lacking a bread knife, and once you begin wanting to cleanly slice through some of the artisan breads now easily available, it becomes important to have a knife up to the task...I think I've found it in the Zelite I just got. First of all, it's just a beautiful piece of workmanship...right from the really nice, solid packaging to the knife itself, tip-to-end...everything just "reeks" (sorry!) of quality, quality, quality. Even before using it, you can see the robustness of the build quality, the heavy duty blade, its unique shape (overall and the cuting edge itself), and the damascus layering; wow! It's SHARP...it's going to "glide" through tough breads, and I'm going to try it on some delicate veggies just for fun..."experiment" a bit. Anyway, it arrived quickly, was at a VERY good price point on Amazon, and I would recommend this knife to anyone needing or looking for that "last addition" to an otherwise pretty complete set of good quality knives...next step will be to purchase a knife "guard" or sleeve to protect the blade when I store it!

There are not words to express how excellent this knife is. I have had the knife for over a year and a half. I wanted to give it at least a year before I wrote a review so I could comment on longevity and durability. The knife has gotten quite a lot of use in these 18 months, so I think I have a representative sample. When you first open up a Zelite knife, you get the chills and your heart flutters like it's Christmas day. The packaging and presentation are superb. Then you get your first glimpse of that beautiful Damascus blade, with its mirror polish. It is immediately apparent that the build quality and precision are first class. There are no gaps, spaces, rough edges, flaws, or blemishes anywhere to be seen. And then you pick it up. The handle is very smooth, yet has a tactile quality that lets you know it will not slip out of your hand. The shape is perfect for the chef's-preferred pinch grip, although I found the handle could use an extra millimeter or two in length (although, that could simply be due to my condition, being a 6'5" tall male). The handle is comfortable and allows utmost control. And then there's the edge. Out of the box, it was razor sharp. In fact, one of my first acts as a new Zelite owner was to inadvertently inflict a minor flesh wound on my left index finger. It bled like stink. That's what years of handling dull knives will do for you. And the blade has stayed extremely sharp for the entirety of the last 18 months. I do about 8 passes of the blade on a ceramic honing rod about every 4-5 uses, and it's still as sharp as the day I opened it. There has never been any hint of dulling (as opposed to micro-burring, which is fixed with the honing rod). The steel is extremely strong and has not sustained any chips or cracks. As an experiment, I decided to compare the Zelite side-by-side with a decent-but-cheap Calphalon utility knife over the past 18 months. I made sure to sharpen up the Calphalon to so similar level as soon as the Zelite arrived. The contrast between the two knives couldn't be more apparent. I've used the cheapo about half as often and have had to hone it twice as frequently. The edge has numerous chips and is starting to dull beyond what the honing rod can do for it. There is no doubt the Zelite is a far superior product. What about the price? For your standard home cook, it might seem a little bit pricey. But, you have to think about this knife as an investment. It WILL last longer than any of your other knives if properly cared for (see sob story below). For the build quality, the steel, the design, and edge retention, you would expect to pay double or more for a similar product from a name-brand knife company. The Zelite really is an incredible value. BONUS SOB STORY: About 2 days after I received my Zelite in the mail, my wife dropped it, tip down, into the sink. Let's just say that was one of the more difficult times in our marriage. Since the tip was so wicked sharp and pointy, it did fold over a little, although not as much as I expected. Luckily I had recently purchased a set of sharpening stones and was learning the art of sharpening. With not much effort, I was able to restore the tip to the blade (for the most part). It saved our marriage!

I have 3 Zelite knives. To be clear, these are not "Japanese knives", they are Chinese knives made with Japanese blades. I also have a Chinese knife made with a German blade, but that's another story (though it's also an excellent knife). I have seen comments about this brand and others sold on Amazon that these are "fake" or "copies of" Japanese knives, which is really in the eye of the beholder. Here's how I see it: The part of the knife that you use and maintain, i.e. the blade and its cutting edge, are Japanese and of a very high level of performance. Goods of Chinese manufacture are often characterized as "cheap" or "mass-produced" and in many (most?) cases that's true. But let's also remember that Asian cultures have been blacksmithing for at least 3,000 years. 2,000-2,500 year-old Chinese swords have been found intact by archaeologists that were still so sharp that they drew blood upon discovery. So the notion that Chinese manufacture of cutlery is arbitrarily a low-grade enterprise is a false premise. I've had my 8" Chef's knife for two years, the other two for about a year. All of them clean, sharpen and hold an edge as well as the $200+ Japanese knives I also have in my block (Shun). For $70, the 6" compares favorably to other knives that cost $150-$400 and that's not an exaggeration. Same with the Chef's - I'd say value is on the order of 30-40¢ to the dollar compared with premium Japanese products that utilize Damascus (layered) forging. I can probably afford to spend more, but I honestly don't feel as if I have to. The thing that I actually like better about the Zelites is their heft: between the solid tang and weighted handle, plus the fuller size and shape of the handle, these knives actually feel better in hand than do Shun. Leverage of this slicer and especially my 8" chef is perfect; I've seen a complaint from one buyer about the knife being handle-heavy so I think that may be a subjective preference. I have small hands for a guy, so I find the feel to be just right (if you're a knife nerd, the balance point is where the handle material meets the bolster, which isn't all that far out of balance for the length of these blades.) I am especially pleased at how well these sharpen with just a few swipes on my ceramic rod - they're easy to keep EXTREMELY sharp if you have skills with sharpening rods or steels. These knives perform remarkably well - I'm not a pro but a an experienced enthusiast - and these blades work well enough for pros and are more than adequate for amateur cooks. In fact, for people who don't have good knife skills, these might be TOO sharp.

The blade's design flows so smoothly into the handle grip. The full tang construction has a hefty feel in my grip, the balance point favors the handle. The 2 rivets on the handle have a "lumpy" feel on both sides of the handle... they are not ground smoothly against the handle as the Mosaic rivet is. I don't know if this is an intended design, regardless I still rate this a 5-⭐ for what it cost. On my first use the blade seemed to feel much longer than 6 inches. After a few weeks this feeling lingered during every use. Unless my ruler is wrong, the blade's edge, from tip to its tapered bolster, measures about 1/8th inch longer (a 6-⭐ rating!). I especially appreciate how the tapered bolster extends out the point of the cutting edge. This is where I occasionally cut my thumb on my other kitchen knife. JMO, this Zelite Infinity rates equal in cutting use to my other Shun kitchen knives. A few lite strokes on the steel prior to use & I am ready to slice tomatoes effortlessly thin. So far, this kitchen knife is the best "bang for my bux" in a long time.
