Want a quality knife that will stand up in a commercial kitchen? So far this scimitar is a favorite in my kitchen for breaking down salmon and most meat fabrication. My only wish is the blade width was a bit thinner for more versatility which would also make it a bit lighter. Otherwise build quality, fit and finish and overall performance are indeed a surprise. I purchased this with hesitation but consider it money well spent. For the price you can't beat this knife. This knife out of the box has a nice edge but if you know how to use a whetstone you can put an insane edge on this thing.

I gave this 5 stars. Because it is a great knife for the price. I would buy again. There are several places in the packaging. That says Made from German steel. Had to search to see where the knife was made. Finally I found Made in PRC. I thought for a second. Where in hell is PRC. Then I remembered the formal name for China is People’s Republic of China. After close examination the knife is well made. My only criticism is the tang sticks up a hair above the handle. This is not a concern for my needs.

Only had this knife a few hours. I'm very impressed with the quality of this product. It is well balanced. The craftmanship of this knife is flawless. Out of the box this knife will literally shave the hair off your arm. Very impressive all around. Will be buying a whole set of this brand..

Dalstrong has really hit the mark with their knives. As a seasoned veteran chef of 30 plus years in this industry, I have experienced most of the big name companies products. Their names are well know. Without hesitation, Dalstrong is my favorite and I have assembled a full kit for use as my culinary competition set as well as my demo set for the classroom as a culinary educator. Too many positive things to say for this review without sounding like an spokesman for the company and needing more paper to do so. I highly recommend Dalstrong knives to my students and to the professional community with which I am a part of. Keep up the great products David!

I do a lot of my own butchering to save money (buying a rib roast for $6/lb instead of ribeyes for $14/lb) because it makes sense. I've always used Global knives until I needed a brisket knife for a BBQ competition and the Dalstrong slicer was my first purchase. I doubt I'll be spending 3x the money on Global ever again. The slicer and this butcher knife from Dalstrong are crazy sharp AND they come with a sheath!! Excellent value, feels good in the hand, wicked sharp and not that it matters, but they're so shiny!

I like the presentation and feel it cuts as smooth as butter

This is a extremely powerful and sharp knife. It will make short work of a rack of ribs, Prime Rib or anything else. It slices through effortlessly. Just be careful, know were your fingers are and were the curved tip of this knife is ... HaHa It is a knife for a lifetime!!!

Dalstrong is quality. This knife comes from the box super sharp. Cuts paper cleanly. This knife cuts through a whole ribloin and made nice steaks with ease. This knife is a true beauty. This is a professional grade knife no doubt about it.

I used it once and loved it soooo much I had to get one as a gift for a chef friend of mine to use at home. Now he loves it, too. Beautiful knife that takes and maintains a great, sharp edge. It's well balanced, has a great handle, and comes at a reasonable price. Worthy of display, but if you get it and use it, you won't simply keep it on display. It works too well to just sit! My first use was breaking down a complete beef rib into a 3-bone roast and steaks. Wow! Easier than a slicer and better than a chef's knife. I had no trouble with the handle slipping in my hand, but I keep my knife hand clean to maintain a safe grip. The handle fits my hand great!

I'm a self taught cook and believe I can make better food than most restaurants. When I realized how important knives were I started investing in Shun. Had spent over $1000 on several of their knives and thought I took pretty good care of them although at times I could have washed them immediately vs couple hours later. But anyways they rusted and chipped. I was horrified that these expensive knives did that and did not want to invest anymore money into them. I then saw a demo at costco for cutco. Ive always heard about them and was impressed. Cutco does have good knives and easy to take care of but still are a little expensive and not as attractive. The Dalstrong knife I got makes a BIG statement when Im cutting a brisket/turkey/steaks at dinner. Its impressive and fun. I was very impressed with their packaging as well. Sold so far and looking on purchasing couple more of their Knives. Great value for the money.
