Light in the hand, razor sharp. Excellent for cutting spare ribs (which I do in Volume). Still figuring out best practices for trimming brisket without trimming fingers....respect this knife!! It arrives ready to replace your favorite blade for a multitude of tasks.

I have been a super market butcher for 37yrs.i purchased this breaker with high expectations. I am thoroughly and comPLEEETLy satisfied with Shogan 10” breaker from Dalstrong. I have only one objection which does not diminish my 5star rating......BUT, I refer to the lack of a quillion which on a butcher knife, prevents your index finger from slipping forward into the blade. This is a critical design flaw which makes the blade’s forward, downward pressure less affective. First day on the job, I cut my index finger in this manner. Don’t get me wrong, this knife is, in a word, STUNNING!!!!....razor sharp, well balanced, hefty....well worth the money, just be very careful and respect that design characteristic I mentioned....enjoy

The Shogun Breaking Cimitar is one powerful knife ... well balanced ... extremely sharp ...slices through BBQ Briskets and Ribs like ... Butter. This is not a knife for the "faint of heart", for when you have it in hand ... you are ready to do some very serious cutting. Note: This is my 5th Shogun Series Knife.

Very sharp
I own most of the knives in the shogun serie from Dalstrong. When I saw that there was a knife dedicated to the cutting of meat, I was immediately interested because I slice lots of meat very think when I prepare beef jerky. So I got the DALSTRONG Butcher's Breaking Cimitar Knife. Upon reception, I had about 6lb of meat to try it with and I can happily report that slicing through it was a bliss. I am completely convinced on the effectiveness of this blade to cut in one try. This knife is beautiful, sharp; it has a very interesting and somehow unique shape (cimetar) and makes a great addition to my knife collection. Dalstrong also is brand that I do trust and respect as they provided me with very good customer service on the few occasions where something was not looking right.

Great Knife!
I purchased this knife for the sexy man in my life. He wanted to cook me a brisket for valentines day, low and slow, to resemble the way our love had matured over the years. I could not think of a better way to show my appreciation then to get him the weapons a good warrior deserves. As he opened the package I could see the expressions on his face explode with excitement, much like a mid summers night dream. The following day the knife was used to trim what I can only explain as the GQ of briskets. The fat was in all the right places yet the muscle was exposed ever so sensually. Needless to say it was one of the best nights of my life. I'm not sure if the knife is to thank but I can assure you it has done its job. Done its job well.

An "Awsome" knife
I have a large number of Henckel 4-Star knives including a 5.5" flexible boning knife used for meat work. Been wanting a Breaking Cimitar for a long time. I finally bought Dalstrong "Shogun" Cimitar and Paring knife. If I look for a "con", the Damascis is not nearly as pronounced as in the images. The Cimitar is well worth its price as it makes cutting up large portions of meat, roasts, and steaks quick and easy. AUS 10V blades are extremely sharp, balanced and glide through large cuts of meat in my large hands. LOL, the Cimitar is so sharp when using it for the first time before I realized it, it cut off half a fingernail. It cuts!
