• HIGH QUALITY STAINLESS STEEL: Our 420HC stainless steel blades are heat treated for optimum hardness and edge retention while maintaining the ability to be sharpened to a razor edge. The steel used is perfect for kitchen specific tasks because of its corrosion resistance, preventing it from oxidizing with rust when it comes to contact with meat, fruits and vegetables. Our steel blades run the length of the knife and through the handle for a full-tang design.
  • SINGLE BEVEL KNIFE EDGE: Traditional Japanese knives in the hands of premier chefs are usually of a single bevel ground edge in order to give the most precise and sharp edge. Our blades are meticulously sharpened to a 15° edge on the right side while the other side remains flat. A conventional Compound edge is sharpened on both sides usually resulting in a 30° edge which is not as sharp. Our design gives you an incredibly sharp edge while you cut and a flat side helps to separate food slices.
  • FULL-TANG TRADITIONAL ROSEWOOD HANDLE: We wanted the handle of our knives to be able to remain in great working condition and maintain the test of time through use and ware. We thought of no other material to use in our handles than Rosewood. Praised for its natural ability to be strong and heavy while being able to maintain a polish. Using Rosewood and our full-tang knife design allows the blade to run throughout the Rosewood handle, giving you a balanced feel when manipulating your knife.
  • DESIGNED FOR CHEFS: Gyuto which translates to literally “beef-sword” is usually known in the professional western cuisine as the chef’s knife, this is the be-all-end-all knife for would be chefs. It’s versatility and length allows for proper use when cutting vegetables or long strokes for clean sashimi slices. Tackling tough meats such as pork belly or needing a sharp edge design for sinewy meats, this knife does it all with grace and professionalism.

The first knife I received was of very poor workmanship. After complaining to manufacturer, they quickly sent me a replacement. The new knife is a difference between night and day. It has a very sharp edge that has been put on with care. Very nice looking - reminds you of "Old school Japanese craftsmanship". I appreciate the Simple Song Co. for making sure I received a good product.

I've been using this knife for the last few weeks, cutting a variety of things and it has performed great! Feels heavy and balanced and it's edge retention has been very good. After using it constantly for meal prep and trimming or cutting meat, it needed a good sharpening. I thought it would be difficult to get it back to how sharp it was out of the box but spending a good 45 minutes with a 1000 grit whetstone and finishing it on the 6000 grit whetstone for another 15 minutes brought the blade back to life. Do take your time when sharpening it, you'll thank yourself when you are using it again later. It's a really good balance of hardness for holding an edge and ease of resharpening. I highly recommend it!

My knife unfortunately arrived with a scratch on the face of it, this can be seen in the attached photo. Upon reaching out to Jason and his team at Simple Song, they were very quick to communicate and graciously replaced my knife free of cost. Fantastic customer service, first and foremost. Now, on to the knife! From the packaging to the knife itself, this is a great product for the price point. Visually the knife looks fantastic from the blade to the handle, I catch myself pulling it out of the knife block and staring at it even if I don't have to cook. Honestly, it looks really damn cool. One thing to note, as this isn't clear in any of the knife photos, the "back" side of the knife has the same etchings/images that are on the black box that the knife comes in. From a visual standpoint it's personally not my cup of tea as the knife would look cleaner overall without it. This is the only "problem" I have with the knife...if you can even call it a "problem." The handle has a nice and solid feel to it with a decent weight, its not too heavy nor too light for my personal preference. Having used only double beveled knives my whole life, my first cooking experience with a single bevel was definitely odd but I'm 100% confident it will feel more natural the more I use it. For $43 shipped, this is great and I'd highly suggest it if you're looking for something new to add to your knife collection or if you're looking to upgrade.

Absolutely love this knife! Immediately got to work in the kitchen with it the day it came in cutting up daikon and bbq chicken thighs for lunch and swordfish and cabbage for dinner. So smooth, so easy to handle (for my large hands and even my girlfriend's considerably smaller ones) and so visually pleasing. In the grand scheme of things I know this is trivial, but I honestly felt cooler in the kitchen using the Simple Song. Also, as a recording artist, the name couldn't be more perfect lol. All and all, a solid piece of cutlery I'll be holding on to for YEARS to come.

EDIT: Simple Song sent me a replacement knife without me even asking. I brought the rating back to 5 stars because that is amazing customer service.. I will continue to buy from them. Thank you Simple Song! Blade is sharp and beautiful but after only 2 months of daily use on vegetables the handle came loose and the blade started to wobble. Not safe to use at this point.. I don't know if this is a common problem for a knife at this price range but I will be sure to invest more money next time in a long lasting knife. 2 stars because I'm a little disappointed :/

Wow! This was bigger than expected. It came in a nice black box. I grill quite a bit and found that this knife was very useful when needing to cut through bones. Had I not bought it for myself I would not be offended if I had received this as a father's day gift.

Good knives are a pleasure to use. I bought this one as a gift but then had to use it all weekend. The weight and balance are perfect to keep from fatigue, it a beautifully polished blade with a fantastic hammon. I know there will be any number of people who will complain about blade material handle construction. Here are some simple facts: Blades will rust if you don't care for them or pit with caustic materials. Handles will break with abuse and wear and tear. Some simple tips for making even an inexpensive blade last a lifetime. Hand wash and dry immediately, light vegetable oil will help prevent rusting. Clean the crevices, and don't use it like a utility knife and you'll be fine. I searched high and low for knives on amazon and kind find tons of high priced knives with mediocre reviews, that's not value in my book. I'll be more than happy to spend my pennies wisely and give a great review to an inexpensive knife that didn't cost so much like this one.

Let me learn you a thing or two about this knife. From the ornate and tasteful box, to the perfectly weighted handle to blade ratio, my vegetables have never been diced so perfectly. I’m not a professional chef by any stretch of the imagination, but if you saw this knife in action you’d think I was Gordon Tapdancing Ramsey. Cutting meat, veggie prep, or avenging the Murder of a loved one, this is the best and most affordable knife for you. If I could rate it six stars I would.

Holds a very sharp edge, looks lovely in the hand, rolls very well, and has enough weight to go through most veggies and fish with little to no force. Also the box it comes in looks and works good enough to store it in! It is kabata style though so need a whetstone to sharpen and hone it.

Excellent knife for an excellent price. Well made, sharp and nicely balanced. Will be my go to knife for fish. It does tend to wander (thin to thick) if you don't practice due to the fact that it is beveled only on one side so it takes a abit of getting used to compared with standard double bevel knives.
