I own both the Gladiator Series 10.5” yanagiba, and the 10.5” Shogun Series yanagiba. I am entirely satisfied with both knives, but my satisfaction with each is for different reasons. The Gladiator-Series Yanagiba is made of a single-piece of high-carbon, German stain-resistant steel, hardened to 55 HRC. The Shogun-Series Yanagiba is made of AUS-10V, 67-layer stainless Damascus steel, hardened to 62+ HRC. The Gladiator is my “workhorse” yanagiba. It’s made of softer steel, but it’s capable of enduring more “abuse”; it requires more-frequent sharpening, but it’s less likely to chip during more robust slicing tasks. My Shogun is my “greyhound” yanagiba. It’s constructed of much harder steel holding a much sharper edge for much longer, it requires infrequent sharpening, but it’s reserved for more refined slicing tasks. The Gladiator exudes an unadorned, simple beauty; the Shogun is stunningly and flagrantly glamorous with its high polish and “Metal-Storm” finish. I say “ooo baby” to both knives. Yes, I admit it, I’m infatuated by their craftsmanship, their performance, and their irresistible good looks. A 10" Henckels chef's knife has been my kitchen workhorse for decades, but I found it less than adequate for making sashimi-like slices of raw beef, so i figured I should get a sushi knife. I'm thoroughly comfortable handling a 10" blade, and this knife is superb at cutting thin slices of meat. That said, I'm not a chef, and I have no knife skills beyond keeping the blade sharp and working slowly. This is a great knife for the money, and it's perfectly adequate for a home cook like me.

The high quality and superior workmanship I have come to expect from Dalstrong

I purchased this knife because I was looking for a good Sushi knife to make some new menu ideas for my sushi nights.... upon arrival of this item, I was amazed by the packaging it came in, and once opened, these (see pic.) were the items I found within the package. I can't believe all the care and precision that was taken into making this Fine piece of Cutlery was priced as it was here on Amazon... Sad for me, Dalstrong will be making some money off of me very soon, as I plan to purchase at least one whole series of these Precision / Quality crafted cutlery sets. I really like the look of the damascus steel blades

I started learning how to make sushi and wanted a knife for that task. This is the one I decided on. Dalstrong sends this in a box that makes it feel special when you get it. You get the distinct impression they have pride in their product and that is always something I like to see. The knife itself is very well made. It has a nice heft to it and is sharp, if not quite sharp enough for me. A quick run on the diamond stone and strop is plenty to touch it up. The handle is a nice looking and is fit up nicely, the rivets and tang aren't noticeable when I ran my hand over them. It doesn't take much to be able to feel a mismatch and I could feel none. Excellent purchase and makes me want to look at their products more in the future.

I’ve never had a knife that cuts like this. I’m a beginner in cutting fish and the other knives I’ve tried made the cuts look jagged and tattered messes. When using this, my fish retained its beauty and sliced so well.

Love this knife!!! Would buy again & again & again. Makes beautiful cuts with one slice. This knife should last you for a very long time proving you care for it properly!
