Paper Sharp
Came in a beautiful box. Due to the length it is blade heavy but you can adapt to it. The edge is machine sharpened and the entire length from heel to tip is paper sharp. Stropping on leather will maintain the edge. Do not sharpen until you watch the YouTube video by Burrfection. This is NOT like a regular knife edge. It is more like a wood chisel edge

Very nice looking knife! I like a heavier knife. This knife feels really solid and balanced. Very sharp as I was able to slice a 4” piece of sashimi thin in one stroke. The push cut was smooth so you know how smooth the slice cut would be. Very well polished for the entire knife. Using a square, I can see that there is a slight concave on the back of the knife. I might have to use a microfilm for the final polish after sharpening. Wow it’s a great valu! Great customer service as well.

I always believe ancient saying that, " Good craftsmanship depends on use of the right tools." I love cooking, and hope enjoying everything during cooking. The knife is the very important tool about cooking. For a good knife can help you easily arrange food material especial on kinds of meat. I've tried lots different knives from cost hundreds dollars Japan knife to 4 dollars cheaper piece of knife. I know this one "Yanagiba Knife Japanese Sushi Sashimi Knife" which is from my friend's recommendation. I like its extremely sharp and easy to cut any meat. Although it's some heavy for me, it do likes a part of my hands to cut meat and vegetable very smoothly. High valuable compare with its cost; and as good as my hundreds dollars Japanese knife.
