True to the Dalstrong brand this knife cuts through jamon like butter. The knife can achieve the flexibility of an Arcos knife or other major brand but you have to apply more pressure, probably because of the folded steel. For cutting a jamon when it's fresh this knife is easily the best in terms of grip, ease of slicing, and ability to get a thin see-through slice. As the ham ages I switch to a Dalstrong filet knife because a 12 inch knife is just to unwieldy to get those thin slices especially in the dryer and harder jamon areas. The only downside of this knife is if you like to scallop cut and bend the knife to get a thin slice you need to apply a bit more pressure.

Sharp knife! Sliced meat like butter

I just unboxed the knife today. I couldn't find the Shogun version on the Dalstrong web page and almost bought the Gladiator. I much prefer the Shogun knives and have many. I found the knife on Amazon and bought it ! this is stiff enough that it won't flex and cause a bad slice like my thin Shun slicer. This knife is 2" longer and stiff enough to do good work with. Just holding it you can tell it will perform. J.Michael

The knife is a wonderful creation. Extremely sharp straight from the box. Has a good amount of flex for it’s extremely long length which is amazing as I turned it into a giant salmon knife to filet the skin off in one nice go. For its size it’s rather extremely light which is good if you have a lot of work you have to do with it. I’ve done a little carving with it and the easiest way to put it is, a sharp hit knife through room temperature butter.

I was impressed that even with a blade this long the knife is nicely balanced and feels good in the hand. The blade is suitably rigid and razor sharp. Finish is top notch and looks good. I'm considering additional ones as Christmas gifts.

Slicing with this knife makes everything feel like soft butter... soft butter you can slice paper thin no less. Its a meat and ham slicer in name - in reality this is the best knife at slicing through cured fish I have ever owned. The length makes it easy to get in one slice, the blade goes exactly where I want it to, almost by just thinking about it. and the entire blade is beyond razor sharp from the factory, holds the edge so well that I have not needed to even hone it yet (4 months - and I use it regularly, not just for salmon). While I focused on salmon, this knife is for any meat that you need to cut thin and consistent slices

The is “hands down” the best beef jerky blade. Easy to control and to slice a top round in the correct direct - down to the last slice. 100% sliced to round. I hope the edge will stay as sharp as it seems judged by the overall quality
