• 【True Deba for Cutting Fish】The Japanese Deba, which is also called the Hon-deba (Literally, “true deba"), is traditionally used to clean and fillet whole fish, but it is also commonly used for breaking down and dressing poultry and other meat with small bones. The significant weight of the Deba is desirable because, with adequate care, the sturdy heel section of the knife can be used to cut or chop through the bones found in small and medium-sized fish and poultry.
  • 【Forged German Stainless Steel】The German knife tradition goes back a great deal. Many have already seen their precision cutting elements turn up on blades for shaving.TUO adopts the 1st class German steel as the material for the blade higher hardness. This results in a sharper blade with better flexibility, anti-corrossion ability, not likely to dent as well.
  • 【Ideal Hardness and Cutting Edge】The hardness and cutting edge of a knife is very important as far as its performance and durability. We use traditional manual grinding menthod combined with modern vacuum heat treatment and nitrogen cooling technology which enhances the hardness up to 58± HRC, sharp yet flexible, with good corrosion resistance. Japanese traditional 15 degree unilateral egding, makes the slicing such a enjoyment rather than just a motion.

Not that sharp out of the box but managed to sharpen a little more enough to be able to slice paper easily. A heavy knife, maneuverability is some what difficult, handle is large, comfortable to hold, be just be careful cutting meat and chicken bc of the weight. Spine is thick as deba are, about 1/4 inch or 6 mm. Solid knife! For the price this knife should last a lifetime. Suggest hand sharpenning every few months if you use it often and your knife will be good as gold!

chopping fish bones is great

Very happy with this Deba once I spent a little bit of time sharpening it.
